SUGAR-N-SPICE COOKIES(FROM PANCAKE MIX!) | JUST A PINCH ...
Due to a prize I won in a recent recipe contest, I found myself with a surplus of pancake mix...and we rarely eat pancakes! I decided to try to find other ways to use up the mix. I found a few ideas online for cookies and muffins and such, but none of them really appealed to me, so I decided to experiment. These are the result and, I've gotta say..they are pretty darn good! And so quick and easy, too! I'm excited to try with other varieties of pancake mix such as chocolate chip or apple cinnamon.

Steps:
- Preheat oven to 350F. Grease a baking tray.
- Stir together the butter or c.o., sugar, eggs, vanilla and salt. Blend in the pancake mix.
- Shape into 1 in. balls and roll in the cinnamon/sugar mixture. Place on the tray 2 in. apart.
- Bake 8-10 min. until golden brown.
- **I made these with 1c sucanat and they were PLENTY sweet. If I had used regular brown sugar, they would have definitely been too sweet(for me). Next time, I will reduce the sugar.
