This chicken wing appetizer can be made and served in a cast-iron skillet. Because the skillet retains heat so well, food stays warm longer in it!

12 chicken wings (2 1/2 lb.)
2 tablespoons vegetable oil
1 recipe Asian Ginger and Soy Sauce or Pineapple Teriyaki Sauce
Thinly sliced green onions (optional)

Steps:

  • Cut off and discard tips of chicken wings. Cut wings at joints to form 24 pieces. In a 12-inch cast-iron skillet heat oil over medium-high. Add wings; cook 10 minutes or until browned, turning once. Drain off fat.
  • Pour Asian Ginger and Soy Sauce or Pineapple Teriyaki Sauce over chicken wings. Simmer, covered, 5 minutes. Simmer, uncovered, 10 to 15 minutes more or until chicken is no longer pink and sauce is slightly thickened, stirring occasionally. If desired, sprinkle with green onions.

2 plump chicken breasts, skin on
3 tablespoons olive oil, halved
Kosher salt
Freshly ground black pepper
6 sprigs fresh thyme
2 sprigs fresh rosemary
6 garlic cloves

Steps:

  • Preheat oven to 400 degrees F.
  • Heat a skillet over medium high heat. Drizzle the chicken breast with 1/2 of the oil, and then season the breast with a good crust of salt and pepper. Put chicken in the pan skin side down, then add the herbs, and garlic. When the skin has a nice golden color turn it over, and put in a preheated oven for 8 minutes or until juice runs clear.
