6 sweet potatoes, peeled
½ cup butter
2 cups packed light brown sugar

Steps:

  • Bring a large pot of water to a boil. Add peeled sweet potatoes, and boil for about 4 minutes. Remove from water, and cut into 1/2 inch slices.
  • Melt butter in a large frying pan over medium heat. Stir in brown sugar until dissolved, adding more butter if necessary. Add sweet potatoes, and fry until golden brown and fork tender, turning occasionally. Serve hot.

I like coming up with new ways to serve foods so that I don't get bored with the same dishes all of the time. I decided to try preparing my sweet potatoes in various ways and this is one that I came up with. Very simple and can be modified to suit your taste. The recipe is enough for two generous servings for adults. The potatoes will not be as crispy as regular potatoes because of the texture difference so be sure to not overcook.

Number Of Ingredients 7

2 medium sweet potatoes
1/2 cup white onion, diced
2 tablespoons olive oil
2 garlic cloves, pressed
1 teaspoon salt (more or less to taste)
1/2 teaspoon pepper
2 tablespoons light brown sugar (lightly packed)

Steps:

  • Dice sweet potatoes no thicker than 1/4 inch thick.
  • Place pan on medium heat to begin warming. While waiting dice onion and prepare garlic.
  • Place oil in pan and add potatoes, garlic, and onions and then coat well(be sure that oil is not left to heat up or it will scorch the onions and garlic).
  • Sprinkle salt and pepper just after adding other ingredients to the pan.
  • Allow the potatoes to cook for a few minutes and check for browning. Keep temperature from getting too hot.
  • Stir occasionally until potatoes are to your desired doneness (approx 10 minutes for me.
  • Turn off heat and add brown sugar while still hot. Stir well and serve.
  • * variation* try using butter instead of olive oil for a more sweet and traditional flavor.

This recipe is perfect for cooking for 1-2, and only takes a few minutes. I used some very skinny home grown sweet potatoes I picked up at a Farmer's Market and recommend you use potatoes that will slice into small discs rather than huge ones.

  • 1. Peel sweet potatoes and cut into 1/2 inch flat, round discs. If desired, cutting into matchstick pieces will also work and bunch together when frying. 2. Combine the Korean twigim garu, cold water, and some salt and pepper. Mix until smooth without any lumps (similar to pancake batter). 3. Add the sweet potato slices and coat thoroughly. 4. I have never Candied Sweet Potatoes in the oven. My mother and mother in law always cooked them in a pan on the stove burner and they were FANTASTIC !! Not ever a bite left. I hope you enjoy cooking them this way. I think long ago when they cooked on wood burning stoves this was an easier way. Also, the oven was reserved to cook a huge pan of corn bread. One of my favorite meals is Purple Hull Peas, Candied Sweet Potatoes and Corn bread...I know, that is down home Southern where the stars shine bright on a cold winter night.
