By "Rostbraten", an Austrian means a thinly sliced sirloin steak which is slightly pounded, seasoned and quickly fried in hot oil. It is always served with a pan gravy. This basic application serves many recipes, of which the one topped with crispy fried onions is the most popular.

4 sirloin steaks, 1/4 inch thick, 6-7 oz each
2 large onions
1 cup flour
2 cups oil, plus 2 tsp oil
2 teaspoons butter
1 teaspoon Hungarian paprika
1 teaspoon Dijon mustard
1 cup whipping cream, or
1 cup light cream
1 cup beef broth
salt
pepper

Steps:

  • In a heavy sauce pan heat 2 cups of vegetable oil to @ 350°F Cut the onions in thin slices, separate into rings.
  • On a plate mix the flour with paprika, dip the lightly moistened onion rings into the flour mixture, coat well and quickly fry them in batches. Remove to a paper towel lined plate, season with salt, set aside.
  • Lightly pound the steaks between 2 sheets of parchment paper, using the flat side of the mallet only. Nick the edges 3-4 times to prevent them from curling up.
  • Season with salt and pepper and coat them on both side with the flour - paprika mixture.
  • In another large frying pan heat 2 tsp of oil and 2 tsp of Butter und quickly fry the steaks, ca. 1 - 2 minutes on each side, add more oil if needed. Remove them from the pan, cover and keep them warm.
  • Add 1/3 of the previously fried onions to the pan, add the mustard and deglaze with some of the beef stock, correct seasonings. Reduce the pan juices to half, scraping off the browned bits at the bottom, add the cream and simmer for a minute or two.
  • At the very end, add the beef steaks to the sauce to heat through, don't let the sauce boil anymore. Add more broth if the gravy gets too thick.
  • Serve with spaetzle or potatoes and top with the remaining onion rings.

¼ cup flour
¼ teaspoon salt
½ teaspoon black pepper
1 pound cube steaks cut into 4 pieces
2 tablespoons vegetable oil
1 large onion thinly sliced
1 large yellow bell pepper cut into thin strips
1 large yellow pepper cut into thin strips
1 can 14 1/2 oz stewed tomatoes
½ cup beef broth
1 tablespoon dried oregano

Steps:

  • On a sheet of wax paper, combine the flour, salt and pepper (I add some garlic powder as well). Dredge the cube steaks in the flour mixture and shake off the excess. Reserve the flour mixture.
  • In a large skillet, warm 1 tbsp of the oil over medium-high heat. Add the cube steaks and cook until browned, about 2 minutes per side. Transfer steaks to a plate.
  • Warm the remaining tbsp of oil in the skillet over medium heat. Add the onion and bell peppers and saute until the vegetables just begin to soften, about 5 minutes.
  • Stir in the reserved flour mixture until no longer visible. Add the tomatoes, beef broth and oregano. Return the steaks to the skillet with any extracted juices.
  • Reduce the heat to medium-low, cover and simmer until the steaks are tender, about 5 minutes. Uncover and simmer for 2 minutes, until sauce is slightly thickened.

We don't eat a lot of steak, and when we do I normally grill it. My mom used to frequently serve pan seared steaks, generally cheaper cuts like sirloin or london broil. So I thought I'd give it a try and see if I could come up with something competitive with my grill. I started with a base recipe from Cook's Illustrated, and improvised from there. I thought this dish was fantastic, and my boys both said they liked it better than the grilled tenderloins I more frequently serve. The sauteed onions, which I prefer to grilled onions, really added to the flavor. Give this a try when the weather is cold and you'd rather warm your kitchen than be outside tending your grill. You won't be disappointed!

  • Heat 2 Tbsp of the oil in a large skillet over medium high heat until just smoking. While oil is heating, pat the steaks dry with paper towels and season both sides with salt, freshly ground pepper, cumin and paprika. I sprinkled the cumin and paprika on so that both sides were lightly covered. I would think this was about 1/2 tsp of each, but possibly a little more or less. Place the steaks on the skillet and cook 2 minutes without moving. Flip the steaks with tongs and reduce heat to medium. Cook about 5 1/2 minutes longer. This may seem like a long time, but it produced beautiful medium rare steaks. If you like our steak medium, try 6 1/2 minutes or longer after flipping. Transfer the steaks to a large plate or cutting board with tongs and loosely tent with aluminum foil. Let rest for 12 minutes while you prepare the onions. Add one additional Tbsp of oil to the oil and juices remaining in the pan. Add the onions, spread them out with a spatula as best you can, and sprinkle them liberally with salt, fresh ground pepper, paprika and cumin (just like the steaks). Saute on medium heat, turning frequently with the spatula (and scraping up browned bits from the bottom of the pan), for about 12 minutes until softened and partially caramelized. Slice the steaks in 1/4 inch slices and serve with pan juices and caramelized onions on top.
