Pan-Fried Mushrooms with Ricotta Cheese Recipe | Allrecipes image

Eat this dish as a side or my personal favorite is topping a grilled sirloin or peppered steak with the mushrooms and drippings. You can use whole or sliced mushrooms. Taste and add garlic powder and seasoned salt if you want more of a taste to it.

¼ cup butter
1 pound button mushrooms, stems trimmed
2 tablespoons red wine vinegar
1 cube beef bouillon, crushed
1 teaspoon minced garlic
1 tablespoon ricotta cheese

Steps:

  • Melt butter in a skillet over medium heat; cook and stir mushrooms until they begin to sweat, about 5 minutes. Add vinegar, beef bouillon, and garlic. Cook and stir mushroom mixture until bouillon is dissolved and mushrooms are lightly browned, 10 to 15 more minutes. Stir ricotta cheese into mushroom mixture and remove from heat.

2 medium onions, thinly sliced
12 mushrooms, cleaned & sliced
1 ounce dry vermouth
Pam cooking spray
salt & pepper

Steps:

  • Lightly spray a skillet with Pam.
  • Add onions and Mushrooms cook over medium heat stirring frequently for apprx 20 minutes or until the onions & mushrooms are golden.
  • Add vermouth and stir to get all the brown off the bottom of the pan.
  • Season with salt & pepper.

Add the remaining oil, turn the heat to medium, and add the shallots, garlic, and herbs. Stir together, add 1/2 teaspoon salt and freshly ground pepper to taste, and cook, stirring often, for another 1 to 2 minutes, until the shallots and garlic have softened and the mixture is fragrant. Add the wine and cook, stirring often and scraping the bottom of the pan, until the wine has evaporated. Taste and adjust seasonings. Remove from the heat and serve.
