Pan-fried Halibut Recipe - Simple Chinese Food image

When I traveled to Dalian, there were a variety of seafood sellers on the beach, so I bought a variety of fish back to eat!
Since this flounder is a bit big, the middle part is pan-fried!

Some Mid-portion of flounder
2 tablespoons Rice wine
Some White pepper
Some salt
Some oil
Some starch

Steps:

  • The halibut I bought was a bit big, and the family did not eat spicy food, so they made the middle part of the fish pan-fried, and made the other parts of the fish.
  • Clean the flounder first, save the middle section of the fish and put it on the plate, add rice wine, salt, and white pepper, mix well.
  • Wrap the well-fed fish meat with appropriate amount of starch (it will not collapse the oil), heat the pan with cool oil, and when the oil is 80% hot, put the fish meat in the pan. When the sides are golden, the fish meat part should also be slightly fried. This is better After eating, it tastes good.

Number Of Ingredients 8

2 pieces of Halibut (approx. 5 oz.), boneless without skin.
1 tsp Vegetable Spice Blend, ground
Salt
2 Tbsp Ghee
½ glass White Wine
2 Tbsp Capers, well rinsed (optional)
3 Tbsp Unsalted Butter, cold and cubed

Steps:

  • 1. With the salt and the ground vegetable spices, season the fish. Let rest in a plate on the kitchen counter. This allows the salt to firm up the fish.2. Heat a pan to medium/hot. Add the ghee and then the fish.3. Cook for a few minutes on each side. The exact time will depend on the thickness of the fish.4. As soon as the fish is nearly cooked (check with the point of a knife if necessary). Add the remaining ingredients to the pan.5. Shake the pan briefly and serve as soon as the sauce is to your liking.
