Pan Burritos Recipe: How to Make It - Taste of Home image

Our family loves Mexican food, so this flavorful, satisfying casserole is a favorite. It’s nice to be able to get the taste of burritos and cut any serving size you want. —Joyce Kent, Grand Rapids, Michigan

Yield 10 servings.

Number Of Ingredients 11

2 packages (1-1/2 ounces each) enchilada sauce mix
3 cups water
1 can (12 ounces) tomato paste
1 garlic clove, minced
1/4 teaspoon pepper
Salt to taste
2 pounds ground beef
9 large flour tortillas (9 inch)
4 cups shredded cheddar cheese or Mexican cheese blend
1 can (16 ounces) refried beans, warmed
Optional: Taco sauce, sour cream, chili peppers, chopped onion and/or guacamole

Steps:

  • In a saucepan, combine the first 6 ingredients; simmer for 15-20 minutes. , In a skillet, brown and crumble the beef. Drain; stir in one third of the sauce. Spread another third on the bottom of a greased 13x9-in. baking pan or dish. , Place 3 tortillas over sauce, tearing to fit bottom of pan. Spoon half of the meat mixture over tortillas; sprinkle with 1-1/2 cups cheese. Add 3 more tortillas. Spread refried beans over tortillas; top with remaining meat. Sprinkle with 1-1/2 cups of cheese. Layer remaining tortillas; top with the remaining sauce. Sprinkle with remaining cheese. , Bake, uncovered, at 350° for 35-40 minutes. Let stand 10 minutes before cutting. Serve with optional ingredients as desired.

This is a lazy but simple way to get the taste of burritos without having to do all the rolling. A meal that can easily be played with by changing the sauce and meats, have fun and enjoy this yummy dish

2 package(s) red enchilada sauce
3 cup(s) water
12 ounce(s) tomato paste
1 - garlic clove, minced
1/4 teaspoon(s) salt
2 pound(s) ground beef
- flour tortillas
2 cup(s) shredded cheddar cheese
16 ounce(s) refried beans, warmed

Steps:

  • preheat oven to 350 degrees
  • In a saucepan combine first 6 ingredients and simmer according to pkg instructions. In a skillet brown the meat and drain off grease.
  • In a greased 13x9 baking dish pour 1/3 cup of the sauce to cover the bottom. Put down a layer of tortillas tearing to fit in the dish and now layer half the meat, beans, cheese and sauce with tortillas. the top layer should be tortillas covered with sauce and cheese.
  • Bake uncovered for 35-40 minutes; let stand 10 minutes prior to serving.
  • FYI: To make it even easier I would just used canned enchilada sauce

  • In a large cast-iron or other heavy skillet, cook beef over medium heat until no longer pink; drain. Stir in taco seasoning; remove from skillet and set aside. Wipe skillet clean. , In a small saucepan, cook refried beans over medium-low heat until heated through, 2-3 minutes. , Spoon about 1/3 cup of beans off-center on each tortilla; top with 1/4 cup beef mixture. Sprinkle with cheese. Fold sides and ends of tortillas over filling and roll up., In same skillet over medium-high heat, brown burritos in oil on all sides. Serve with sour cream and salsa.
    Freeze option: Individually wrap cooled burritos in paper towels and foil; freeze in a freezer container. To use, remove foil; place paper towel-wrapped burrito on a microwave-safe plate. Microwave on high until heated through, turning once, 3-4 minutes. Let stand 20 seconds.
