This Oven Roasted Red Skin Potatoes recipe is an easy side dish that pairs well with all your favorite main dish meats. You'll only need a few ingredients: red skin potatoes, olive oil, minced garlic, and a few seasonings.

Red skin potatoes (about 7 larger potatoes)
2 tablespoons olive oil
2 tablespoons minced garlic
1 teaspoon onion powder
1 teaspoon Italian seasoning
1/4 teaspoon pepper
1/4 teaspoon salt

Steps:

  • Preheat your oven to 400 degrees F. Scrub/wash your potatoes with a potato brush. Grease a baking sheet or line it with parchment paper.
  • Cut your potatoes into small chunks that are all about the same size by cutting each potato in half and then cutting each half in half or fourths (depending on the size of your potatoes). Lay the potatoes on your prepared baking sheet.
  • Mix together oil, garlic, onion powder, Italian seasoning, salt and pepper, and brush onto the potatoes. Bake for 30-35 minutes. Serve.

2 ounces Lipton Onion Soup Mix (2 packages)
3 -4 tablespoons olive oil
black pepper, to taste
garlic powder, to taste

Steps:

  • Wash potatoes and cut into 1 inch pieces, leaving the skin on.
  • Add the potatoes, soup mixes, and olive oil to a large bowl and toss to coat.
  • Spray a large baking sheet with cooking spray and arrange potatoes in a single layer.
  • Use two pans if you need to keep from crowding.
  • Top potatoes with any oil/soup mix left in the bowl. Season with black pepper and garlic to taste.
  • Bake at 425 for 35 to 45 minutes or until golden and crispy, flipping once halfway through cooking.
  • Serve with sour cream and chives.
