2 cups corn flakes cereal, crushed to 1 cup
2 egg whites
1 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon dried oregano leaves
1/4 teaspoon ground red pepper (cayenne)
3 to 3 1/2 lb cut-up whole chicken, skin removed

Steps:

  • Heat oven to 400°F. Spray rack in broiler pan with cooking spray.
  • In shallow bowl, place crushed cereal. In another shallow bowl, beat remaining ingredients except chicken with fork until well blended. Dip chicken pieces into egg white mixture; coat with cereal. Place on rack in broiler pan.
  • Bake about 45 minutes or until thermometer inserted in center of breast reads 170°F and in center of thighs, legs and wings reads 180°F.

I'm too lazy to fry chicken the traditional way. I've experimented with chili powder, Greek seasoning etc. in place of the paprika or poultry seasoning. Try what you like.

1/4 cup Butter Flavor Crisco
1 cup flour
2 teaspoons paprika or 2 teaspoons poultry seasoning
1 teaspoon salt
1/2 teaspoon pepper
4 skin-on bone-in chicken breasts

Steps:

  • Heat oven to 425 degrees.
  • Melt Crisco in a 13” x 9” baking pan.
  • Combine flour, paprika, salt and pepper in a bag.
  • Shake chicken pieces, one at a time, in bag to coat with flour mixture.
  • Place chicken skin side down in baking pan.
  • Bake, uncovered, 30 minutes.
  • Turn chicken.
  • Bake 30 minutes longer.

Set aside and allow the chicken to rest for a minute or 2 in the breading mix for the coating to set up. Vigorously shake off any excess breading mix and arrange it onto a roasting rack fitted inside a rimmed baking sheet. Excess flour will not brown without a generous coating of cooking spray oilAfter all the chicken is coated, spray each piece generously with aerosol oil or non-fat cooking spray. This helps the coating brown evenly and crisp up in the oven. (Even a generous coat of aerosol oil is still much less oil than deep-frying).
