1 lb peeled, diced into 1-inch cubes russet potatoes
2 large, peeled and trimmed garlic cloves
6 tbsp hot milk
2 tbsp at room temperature unsalted butter
1 tbsp chopped parsley
to taste salt
2 tsp ground white pepper
4 cups or enough to cover the potatoes water
¼ cup per serving gravy
a sprinkle per serving, chopped parsley or green onions

Steps:

  • Boil the russet potatoes and garlic in a large covered pot.
  • Reduce the heat, and simmer for about 20 minutes, until the potatoes are tender.
  • Transfer the potatoes into a mixing bowl.
  • Drain and reserve ¼ cup of water.
  • While warm, mash the potatoes and garlic together into a bowl using either a masher or food mill.
  • Add the unsalted butter, reserved water, milk, white pepper, and parsley.
  • Season the mash with salt. Mix until combined. Adjust accordingly.
  • Serve with gravy.

4 slices bacon, or more to taste
3 pounds potatoes, or more to taste, peeled and cut into chunks
½ cup butter
1 (16 ounce) container sour cream
8 ounces shredded Cheddar cheese
½ chopped fresh chives
salt and ground black pepper to taste

Steps:

  • Place the bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels.
  • Place potatoes into a large pot of lightly salted water; bring to a boil, reduce heat to medium-low, and simmer until tender, about 20 minutes. Drain potatoes and return them to the pot.
  • Mash butter into the potatoes with a potato masher or electric hand mixer until melted completely into the potatoes; add sour cream and continue to beat until combined. Crumble bacon into the potato mixture; add Cheddar cheese and chives and stir. Season potatoes with salt and pepper.
