1 (15 ounce) can blueberries, in liquid rinsed and drained or 1 cup fresh blueberries
1 (18 ounce) package white cake mix
1 (3 1/2 ounce) package instant vanilla pudding (4-serving size)
4 eggs, beaten
1/2 cup vegetable oil
3/4 cup milk
1 teaspoon vanilla

Steps:

  • Rinse blueberries lightly and drain well.
  • In mixing bowl, beat eggs until light. Add the cake mix, pudding, vegetable oil, vanilla, and milk.
  • Beat until smooth, but do not over beat (about 2 1/2 minutes). Batter will be thick.
  • Carefully fold in blueberries with spoon. Try not to break the berries--fill muffin cups 3/4 full and place into preheated 350F degree oven for 20-30 minutes, depending on muffin cup size.
  • Will make 9 large or 12-15 small muffins.

Number Of Ingredients 12

5 ounces semisweet chocolate
2 ounces baking chocolate squares
1/3 cup butter
3/4 cup light sour cream
2/3 cup packed light brown sugar
1/4 cup light Karo syrup
1 egg
2 teaspoons vanilla
1 1/2 cups flour
1 1/2 teaspoons baking soda
1/4 teaspoon salt
1/2 cup chocolate chips

Steps:

  • Preheat oven to 400 degrees.
  • Put 19 muffin cup liners in regular sized muffin pans.
  • In microwave, for 1 minute, melt the first 3 ingredients- semisweet chocolate, baking chocolate and butter.
  • Stir.
  • Microwave a little more if needed.
  • Add sour cream and brown sugar, stir.
  • Add Karo syrup, egg and vanilla and stir.
  • Add flour, soda and salt and stir.
  • Add chocolate chips.
  • Fill muffin cups 1/2 to 2/3 full.
  • Bake 10-15 minutes.
  • Don't overbake.

Beat till smooth but don't over beat. About two to two and half min. Batter will be thick. Carefully fold blueberries in batter with a spoon or possibly spatula. Try not to break the berries, they can be very tender. Fill muffin c. 3/4 full and place in a preheated oven at 350 degrees for 20 to 30 min depending on the size of you muffin c.. Test with a tooth pick and taking care not to over bake. Store muffins in a air tight container. This recipe yields 9 large or possibly 12 to 15 small muffins.
