3 tbsp osmanthus jam (or 1½ tsp dried osmanthus with 3 tbsp honey)
15g goji berries (soaked and drained)
110g rock sugar
30g gelatin powder
600ml water
100ml water (for gelatin powder)

Steps:

  • To Prep Combine gelatin powder with 100ml water, mix well and set aside. To Cook Pour 600ml water and dried osmanthus, if using, in a pot and bring to boil, then lower to medium heat. Optional: use a mesh strainer to remove some of the osmanthus for a smoother texture. Mix in the rehydrated gelatin and stir until dissolved. Pour in the rock sugar and stir until dissolved. Add in the goji berries and osmanthus jam or honey. Mix well and remove from heat. Let cool. Pour into a mould and refrigerate for at least 4 hrs.

600g Hawthorn
150g crystal sugar
3 tablespoons Sugar Osmanthus
Right amount lemon
Right amount Osmanthus

Steps:

  • Wash the hawthorn, remove the stems and seeds
  • Smash or mash the hawthorn into a bread bucket, squeeze a little lemon juice
  • The bread machine selects the jam function and starts to work
  • Prepare an appropriate amount of rock candy, weigh it, put it in a small bowl of water, and slowly heat it to dissolve. The amount of rock candy depends on personal taste.
  • Pour the sugar water into the bucket, and the bread machine will continue to work while heating while stirring
  • Heat for about 30 minutes, add 3 tablespoons of sweet-scented osmanthus, then you can take some sauce to taste the sweetness, increase or decrease the sweet-scented osmanthus according to your preference
  • The bread machine continues to work, the jam becomes more and more delicate, continue to cook
  • Wash the container, boil a pot of boiling water, put the container in and boil for 5 minutes to sterilize, take out and drain
  • After 45 minutes, the jam is boiled and thick, sprinkle with dried osmanthus and stir a little, put it into a container, cover it upside down and cool down.
