I needed an easy cookie cutter recipe in a hurry and I found this brilliant recipe online here http://planningwithkids.com/2010/05/01/easy-cookie-cutter-recipe/ *Original recipe says to use self raising flour but I didnt have any so added extra baking powder & salt. I want to use my own photos to show exactly how easy this is, I have never made cookies before and I think this recipe is almost completely non-fail! My biggest mistakes were 1) choosing a star shape (the points overcooked so fast!) 2) rolling the dough too thin or too thick (I was flustered due to time constraints).

3 1/4 cup(s) flour
3 teaspoon(s) baking powder
1 teaspoon(s) salt
1 1/2 cup(s) caster sugar
150 gram(s) butter
2 - eggs
2 tablespoon(s) milk
1 teaspoon(s) vanilla extract

Steps:

  • Preheat oven to 180C Mix flour, baking powder and salt in a large bowl
  • Cream butter, sugar and vanilla in a separate bowl
  • Add one egg to butter mixture and mix until completely combined, then add other egg and repeat, lastly add milk and mix well.
  • Add butter mixture to the flour and mix until it starts to come together then using hands, mix dough into a ball
  • Cut dough into 3 parts and roll each part out flat, between 2 sheets of baking paper. Layer all 3 sheets into a baking dish and refrigerate for 30 minutes to an hour. I found this a little hard because my baking paper was so slippery and it was hard to roll, next time I might try cling wrap instead.
  • Remove sheets from fridge and use cookie cutters to cut out shapes. TIP: Spray cookie cutters with cooking spray or grease the edges (not too much). This makes it easier to pop the dough out from the cookie cutter.
  • Bake for 8 minutes or until golden. Roll out remaining dough and repeat until finished.
  • I got a whole lot of cookies out of this recipe. The star shaped cookie cutter I used was about 3 inches, so all together I was able to make about 30 cookies. I love this recipe, not bad for my first attempt and I think it will get easier the more I make it but Im very grateful to the lady who posted the original recipe.

3 1/2 cups of all purpose flour
1 1/4 cup sugar
2 sticks of butter (room temperature)
1 egg
1 1/2 tsp baking powder
1 tsp salt
1 tsp vanilla extract.

Steps:

  • In the bowl of a mixer (or with a handheld mixer), cream together the butter and sugar until fluffy. Add in the egg and vanilla, then mix again until thoroughly combined.
  • In a separate bowl, mix together the flour, baking powder and salt.
  • Slowly add the dry ingredients to the wet ingredient and mix together until you have a thick mixture, but it will be spreadable (similar to peanut butter).
  • Baking depends a lot on a lot of different factors – add the last cup of flour slowly until you get the right consistency. If you add it all, yours might be too dry.
  • Wrap the mixture with clear plastic wrap, and put in the refrigerator for an hour or so until completely chilled. Half the mixture, then roll it out between two sheets of parchment paper until it is the desired thickness (no additional flour needed = no mess - yay!). Cut with cutters, then bake at 350 degrees for 8 to 10 minutes or until bottom JUST begins to brown. Keep an eye on them, they'll bake rather quickly.
