- 1. Prepare orzo in water according to package directions; drain but do not rinse.
- 2. Meanwhile, in a large skillet heat oil over medium heat. Add onion and cook for 3 minutes or until softened, stirring constantly. Add garlic and cook 1 minute more. Remove from heat.
- 3. Stir in orzo, arugula and vinaigrette. Season to taste to salt and pepper.
