ARUGULA-ORZO SALAD - HY-VEE RECIPES AND IDEAS

1.5 c. of (8 oz) uncooked orzo
1 tbsp. of Hy-Vee Select olive oil
1 c. of chopped red onion
2 clove(s) of garlic, minced
2 c. of arugula leaves
3 tbsp. of Hy-Vee balsamic vinaigrette
0 Hy-Vee salt and Hy-Vee black pepper, to taste

Steps:

  • 1. Prepare orzo in water according to package directions; drain but do not rinse.
  • 2. Meanwhile, in a large skillet heat oil over medium heat. Add onion and cook for 3 minutes or until softened, stirring constantly. Add garlic and cook 1 minute more. Remove from heat.
  • 3. Stir in orzo, arugula and vinaigrette. Season to taste to salt and pepper.

1 cup uncooked orzo pasta
6 cups fresh arugula
1/2 cup crumbled feta cheese
1/2 cup sliced almonds, toasted
1/2 cup dried cherries or dried cranberries
2 tablespoons extra virgin olive oil
1/4 teaspoon salt
1/8 teaspoon pepper
Lemon wedges, optional

Steps:

  • Cook pasta according to package directions for al dente. Drain orzo; rinse with cold water and drain well. In a large bowl, combine arugula, feta, almonds, cherries, oil, salt and pepper. Add orzo; toss to coat. If desired, serve with lemon wedges.
