My girlfriend is a caterer and this is one of her most requested dishes. My DD's always bring some home when they work parties with her and it's on the menu! I hope you enjoy it. Orzo is a greek pasta for those of you who aren't sure of what it is!

1/2 lb orzo pasta, cooked al dente
2 (10 ounce) boxes frozen chopped broccoli, thawed
3/4 cup butter
3 large garlic cloves, chopped
1/4-1/2 cup olive oil
salt and pepper

Steps:

  • In a skillet over medium high heat melt the butter with the oil and saute the garlic until aromatic. Add the thawed broccoli and saute until heated through. Season to taste with the salt and pepper. Mix with the cooked orzo and serve alongside your favorite chicken or lamb dish.

3/4 cup uncooked orzo pasta
2 cups fresh broccoli florets
1/3 cup pitted Greek olives
1/4 cup crumbled feta cheese
1/4 cup grated Parmesan cheese
2 tablespoons minced fresh basil
4-1/2 teaspoons slivered almonds, toasted
1 tablespoon olive oil
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon pepper

Steps:

  • In a large saucepan, cook pasta in boiling water for 7 minutes. Add broccoli and cook 2-3 minutes longer or until pasta is tender; drain. Meanwhile, in a small bowl, combine the olives, feta cheese, Parmesan cheese and basil., In a small nonstick skillet, saute almonds in oil for about 1 minute. Stir in red pepper flakes and pepper; cook and stir 1 minute longer. Pour over pasta mixture; toss to coat. Stir in olive mixture; toss to coat.

  • Stir in the lemon juice, add the remaining liquid (or you can hold back the last 1/8 cup if your orzo pasta is small) and the chopped broccoli. Bring to a boil then lower to simmer, cover and cook for six to ten minutes. The cook time will depend on the size of your orzo. To be safe, check for doneness at six minutes. The orzo should be al dente or just past this stage in order for it to be ready. If yours is under cooked and needs more liquid, add the remaining liquid if you held it back. If it's just slightly undercooked but has ample liquid, just cover and simmer for a few more minutes. Even when it's done the orzotto may look watery but this excess liquid will be absorbed eventually. Stir in the Parmigiano-Reggiano and if you'd like a creamier and more lemony dish, feel free to add more butter and lemon. Same for the cheese. Serve on its own or with your protein of choice.
