3 1/2 cups flour, sifted
1/2 teaspoon salt (optional)
1 lb orange slice candy, cut up
8 ounces dates, pitted, chopped
2 cups pecans, chopped
3 1/2 ounces coconut, flaked
1 cup butter
2 cups sugar
4 eggs
1 teaspoon baking soda
1/2 cup buttermilk
1 cup orange juice
2 cups confectioners' sugar, sifted

Steps:

  • Sift flour and salt (if using); set aside.
  • Combine orange slice candy, pitted dates, pecans and coconut; set aside.
  • Beat butter until light. While beating, gradually add sugar. Beat eggs, then add to butter and sugar.
  • Combine baking soda and buttermilk.
  • Add milk alternating with flour mixture. Blend well after each addition.
  • Add candy mixture, mixing well.
  • Turn into a 10-inch tube pan that has been greased and floured. Bake for 1 hour and 45 minutes at 300 degrees.
  • Remove from oven; combine orange juice and sugar and mix well.
  • TOPPING Combine orange juice and sugar. Mix well. Pour over cake.

Number Of Ingredients 12

1 cup (2 sticks) Butter
2 cups Granulated Sugar
4 Eggs
½ cup Buttermilk
1 teaspoon Baking Soda, dissolved in the buttermilk
3 ½ cups Plain Flour, sifted, reserving ½ cup
1 box Dates
1 lb. Orange Candy Slices
2 cups Pecans, chopped
1 cup frozen Coconut, grated, fully thawed.
1 cup Orange Juice
2 cups Confectioners Sugar

Steps:

  • Chop the orange slices. Chop the dates. Chop the pecans.
  • Add the orange pieces, chopped dates, and chopped pecans to a large mixing bowl.
  • Add the ½ cup reserved flour. Toss together until pieces are coated.
  • Add the coconut, toss again to coat. Set aside.
  • In a large mixing bowl, cream together the butter and sugar, until smooth.
  • Add eggs, one at a time, mixing after each addition just until incorporated.
  • Mix the baking soda into the buttermilk. Stir until dissolved.
  • Add flour, alternating with milk, adding portion of flour first, and ending with flour.
  • Mix after each addition, just until incorporated together.
  • Add the orange pieces mixture to the batter.
  • Use a large spoon to fold the orange pieces mixture into the batter just until combined.
  • Place batter into a lightly greased and floured tube pan.
  • Place in oven preheated 250F degrees, on center rack.
  • Bake from 2 to 2 ½ hours, or until done. Test with toothpick for doneness.
  • Insert wooden toothpick, if it pulls out clean and without crumbs, cake is done.
  • Remove from oven, set on wire cooling rack.
  • Place the orange juice and confectioners’ sugar in a small mixing bowl. Stir until well mixed.
  • Pour the orange juice and sugar mixture over the cake as soon as you remove cake from oven.
  • Let stand in pan overnight.
  • Enjoy!

ORANGE SLICE CANDY CAKE | JUST A PINCH RECIPES
My grandmother used to make an orange slice cake that my grandfather loved. I don't have her recipe, but I found this in that cookbook my great aunt gave me. I don't recall hers having anything in it but the orange slices. This one calls for dates and nuts, which sounds totally gross to me, so, since I can't stand dates, it's craisins for me instead, if anything. I'm probably going to make this with just the orange slices, at least the first time. However you decide to make yours, enjoy! I found a second version of this cake in the same cookbook. It was slightly different and included coconut as well, so I've also listed that version below. I'm thinking my grandma's could have had coconut in it. I just may try that, but I'll still leave out the dates and nuts! LOL Note: Photo is borrowed from the internet. **These recipes are from the Plummerville Homecoming Cookbook, 1994, and the recipe credit for the first version goes to Martha Ann Weatherby Anglin. The second version of this cake is from Betty Sue Adams Bowden.**
