Orange Sandwich Cookies Recipe: How to Make It image

These cookies taste just like the orange Creamsicle treats you remember as a kid. Soft orange cookies are filled with a buttery smooth filling.—Benita Villines, Spring Hill, Tennessee

Number Of Ingredients 18

1 cup butter, softened
4 ounces cream cheese, softened
1-3/4 cups confectioners' sugar
1/2 cup thawed orange juice concentrate
4 teaspoons grated orange zest
1/2 teaspoon vanilla extract
2-1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
10 drops yellow plus 2 drops red food coloring
Additional confectioners' sugar
FILLING:
1/2 cup butter, softened
4 ounces cream cheese, softened
1/4 teaspoon vanilla extract
2 cups confectioners' sugar
1 tablespoon orange juice concentrate
1/8 teaspoon grated orange zest

Steps:

  • In a large bowl, cream butter and cream cheese until light and fluffy. Gradually beat in confectioners' sugar. Beat in the orange juice concentrate, zest and vanilla. Combine the flour, baking soda and salt; gradually add to creamed mixture and mix well. Stir in food coloring. (Dough will be soft.), Drop by rounded tablespoonfuls 3 in. apart onto ungreased baking sheets. Flatten slightly with a glass dipped in confectioners' sugar., Bake at 400° for 6-9 minutes or until edges begin to brown. Remove to wire racks to cool completely., For filling, in a small bowl, cream the butter, cream cheese and vanilla until light and fluffy. Gradually beat in confectioners' sugar. Add orange juice concentrate and zest., Spread filling on the bottoms of half of the cookies; top with remaining cookies. Store in the refrigerator.

1/2 cup butter, softened
1 cup sugar
1 large egg
3 tablespoons frozen orange juice concentrate, thawed
1 tablespoon grated orange zest
1-1/2 cups all-purpose flour
2 tablespoons cornstarch
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 cup dried cranberries, finely chopped
FILLING:
1/2 cup butter, softened
2 tablespoons frozen orange juice concentrate, thawed
1/2 teaspoon grated orange zest
1/2 teaspoon vanilla extract
2 cups confectioners' sugar

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy. Beat in egg, orange juice concentrate and orange zest. In another bowl, whisk flour, cornstarch, baking powder, baking soda and salt; gradually beat into creamed mixture. Stir in cranberries., Shape level tablespoons of dough into balls; place 2 in. apart on ungreased baking sheets. Coat bottom of a glass with cooking spray, then dip in flour. Press cookies with bottom of glass to flatten, redipping in flour as needed. Bake 8-10 minutes or until edges are golden brown. Remove from pans to wire racks to cool completely., In a small bowl, beat butter, orange juice concentrate, orange zest and vanilla until light and fluffy. Gradually beat in confectioners' sugar. Spread filling on bottoms of half of the cookies; cover with remaining cookies., Freeze option: Freeze shaped balls of dough on baking sheets until firm. Transfer to resealable plastic freezer bags; return to freezer. Prepare, bake and fill cookies as directed.

Divide in half; wrap one half with plastic wrap and set aside. Transfer unwrapped dough to a parchment-lined work surface. Flatten dough slightly with your hand, and then top with a second sheet of parchment. (Dust dough with flour if sticky.) Using a rolling pin, roll out dough between sheets of parchment to about 1/8-inch thickness; set aside. Remove plastic wrap from other dough half and repeat rolling process. Transfer dough, still sandwiched between parchment, to baking sheets and refrigerate until chilled, at least 30 minutes. Preheat oven to 350°F. Remove both dough halves from refrigerator and peel off all parchment. Using a 2-inch square cookie cutter, cut cookies out of dough, rerolling scraps twice. Place cookies on parchment-lined baking sheets, spacing 1 inch apart. Bake cookies until dark golden around edges, 16 to 18 minutes, rotating baking sheets halfway through. If desired, a decorative tip can be used outer edge of filling to resemble ice cycles or Santa’s cuffs.Store cookies, well wrapped, in the refrigerator.
