1?½ cups orange juice
1 tablespoon butter
1?½ cups instant rice
1 (11 ounce) can mandarin orange segments, drained

Steps:

  • In a saucepan over medium-high heat, combine the orange zest, orange juice, and butter. Bring to a boil, and stir in rice. Cover, and remove from heat. Let stand 5 minutes. Mix in mandarin orange segments, and serve immediately.

2/3 cup diced celery
1/4 cup butter, cubed
1-1/2 cups orange juice
1 cup uncooked long grain rice
3/4 cup water
2 tablespoons grated orange zest
1 tablespoon dried minced onion
1 teaspoon salt
1/8 teaspoon dried thyme

Steps:

  • In a saucepan, saute celery in butter until tender. Add the remaining ingredients; mix well. Bring to a boil. Reduce heat; cover and simmer for 20 minutes or until the rice is tender.
