1-1/2 cups sugar
1/4 cup water
3 tablespoons orange juice concentrate
2 cups pecan halves
1/2 teaspoon grated orange zest

Steps:

  • In a large heavy saucepan, combine the sugar, water and orange juice concentrate. Cook over medium-high heat, without stirring, until a candy thermometer reads 238° (soft-ball stage). Remove from the heat; stir in pecans and orange zest. , Beat until mixture thickens and loses its gloss, about 2 minutes. Drop by teaspoonfuls onto waxed paper to set. Store in an airtight container.

Steps:

  • Bake pecans in a shallow pan at 350°, stirring occasionally, 10 to 15 minutes or until toasted.
  • Bring juice concentrate, sugar, and cinnamon to a boil in a heavy saucepan; boil, stirring constantly, 1 minute. Remove from heat; stir in toasted pecans.
  • Drop pecans 1/2 inch apart onto an aluminum foil-lined baking sheet. Let stand until firm.
