These Orange Meltaway Cookies are fabulous melt-in-your-mouth-cookies, with a refreshing orange flavor that will keep you coming back for more!

Number Of Ingredients 13

FOR THE COOKIES:
2 cups flour
1/2 teaspoon baking powder
1/2 teaspoon salt
2 sticks butter, softened
3/4 cup sugar
1 egg
3 teaspoons Orange Emulsion (can sub orange extract)
FOR THE GLAZE:
1 cup powdered sugar
1 Tablespoon milk
2 teaspoons orange emulsion
1 teaspoon fresh grated orange zest

Steps:

  • Preheat oven to 375 degrees. Line cookie sheet with parchment paper.
  • Whisk together dry ingredients for the cookies, set aside.
  • In your mixer, cream together: butter, sugar, egg and orange extract. Slowly add in the dry ingredients, and mix until smooth.
  • To form cookies, roll into balls, and press to flatten with the bottom of a glass.
  • Bake for 7-8 minutes. Watch closely as ovens will vary. When the edges begin to golden take them out, they are done!
  • Cool on a wire rack while you prepare the glaze.
  • For the glaze, mix together ingredients, "frost" or drizzle on warm cookies. Glaze will set while cookies cool completely.

1 package (11-1/2 ounces) milk chocolate chips
1 cup semisweet chocolate chips
3/4 cup heavy whipping cream
1 teaspoon grated orange zest
2-1/2 teaspoons orange extract
1-1/2 cups finely chopped toasted pecans
COATING:
1 cup milk chocolate chips
2 tablespoons shortening

Steps:

  • Place chocolate chips in a bowl; set aside. In a saucepan, bring cream and orange zest to a gentle boil; immediately pour over chips. Let stand for 1 minute; whisk until smooth. Add extract. Cover and chill for 35 minutes or until mixture begins to thicken. , Beat mixture for 10-15 seconds or just until it lightens in color (do not overbeat). Spoon rounded teaspoonfuls onto waxed paper-lined baking sheets. Cover and chill for 5 minutes. , Gently shape into balls; roll half in nuts. In a microwave; melt chocolate and shortening; stir until smooth. Dip remaining balls in chocolate; allow excess to drip off. Place on waxed paper; let stand until set. Store in the refrigerator.
