Now here's an idea to please both sides of the cranberry sauce debate: Start with canned sauce (it contains just the berries and sugar), and elevate it with aromatics like orange zest and candied ginger.

1 can (14 ounces) whole-berry cranberry sauce, such as Ocean Spray
2 teaspoons finely grated orange zest, plus 2 tablespoons fresh juice
1/2 teaspoon ground cinnamon
2 tablespoons finely chopped candied ginger
1 tablespoon white-wine vinegar
Kosher salt and freshly ground pepper

Steps:

  • In a bowl, stir together cranberry sauce, orange zest and juice, cinnamon, ginger, and vinegar; season with salt and pepper. Serve immediately, or refrigerate in an airtight container up to 1 week.

3 cups fresh cranberries (12 ounces)
1 cup sugar
1 tablespoon minced peeled fresh ginger
1 navel orange, peel and pith removed, flesh cut into segments

Steps:

  • Stir together cranberries, sugar, and ginger in a medium saucepan. Cook over medium-high heat, stirring occasionally, until sugar has dissolved and cranberries begin to pop, about 7 minutes.
  • Add 1 cup water; simmer until thickened, about 4 minutes. Remove from heat; stir in orange. Let cool.
