Yield 1 loaf (16 slices).

Number Of Ingredients 12

2 cups all-purpose flour
1 cup sugar
1-1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup orange juice
1 large egg, room temperature, lightly beaten
2 tablespoons hot water
2 tablespoons melted butter
8 ounces fresh cranberries, halved
1/2 cup chopped pecans
4 teaspoons grated orange zest

Steps:

  • Preheat oven to 325°. Whisk together the first five ingredients. In another bowl, whisk orange juice, egg, water and butter. Stir into dry ingredients just until moistened. Fold in cranberries, pecans and orange zest. , Bake in a greased 9x5-in. loaf pan until a toothpick inserted in center comes out clean, 55-60 minutes. Cool 10 minutes before removing from pan to a wire rack.

Yield 1 loaf (16 slices).

Number Of Ingredients 11

1/4 cup butter, softened
1 cup sugar
1 large egg
1 teaspoon grated orange zest
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon baking soda
3/4 cup orange juice
1 cup chopped fresh or frozen cranberries
1 cup golden raisins

Steps:

  • In a large bowl, cream butter and sugar. Beat in egg and orange zest. Combine the dry ingredients; add to creamed mixture alternately with juice. Fold in cranberries and raisins. Pour into a greased 9x5-in. loaf pan., Bake at 350° for 60-65 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes; remove from pan to a wire rack to cool completely.
