1 tablespoon olive oil
2 tablespoons butter, cut into small pieces
1 lb boneless skinless chicken breast
salt
fresh ground black pepper
1 (6 ounce) can frozen orange juice concentrate
1/4 cup whole smoked almonds, chopped
3 tablespoons Bourbon
1 baguette or 3 french dinner rolls
2 tablespoons orange marmalade
2 tablespoons butter
2 teaspoons hot sauce

Steps:

  • To make the chicken: preheat a nonstick skillet over med-high heat; add in oil and butter.
  • When the butter has melted and is hot, add in the chicken.
  • Season with salt and pepper; brown for 3-4 minutes on each side.
  • Decrease heat to medium low; add in juice concentrate and spoon over chicken as it melts down.
  • Simmer 5 minutes; transfer chicken to dinner plates, leaving most of the sauce in the pan; top chicken with almonds.
  • Increase heat on the sauce and add in bourbon; cook sauce until it is slightly browned, 2-3 minutes; spoon over chicken and serve.
  • To make the butter: place bread in a warm oven or toaster oven to crisp the crust.
  • In a small bowl, microwave the marmalade and butter 15 seconds on HIGH.
  • Add in hot sauce and stir; spread or brush the sweet-hot butter on the crusty hot bread and serve alongside the chicken.

Give oven-roasted chicken a sweet and savory spin with this bourbon chicken. The versatile and easy peach glaze can be made with fresh, canned or frozen peaches.

1/2 small chicken, 1 leg and 1 breast, bone-in and skin-on
1/2 onion, finely chopped
1/4 cup(s) water
1/4 cup(s) white wine
2 fresh peaches (see notes for using frozen or canned)
1 tblsp white sugar
1/2 cup(s) bourbon
1 1/4 cup(s) peach juice
Salt and pepper, to taste

Steps:

  • Preheat the oven to 425°F. Place chicken in a deep baking dish or casserole.
  • Add onion, water and white wine to the chicken. Season to taste with salt and pepper. Roast in the oven for 35-40 minutes, until the skin is golden and crispy.
  • While the chicken is roasting, peel and chop the fresh peaches into small cubes. If using frozen peaches, remove from the freezer and let sit at room temperature for 15 minutes before prepping.
  • Remove chicken from oven and pour chicken juices and cooked onion into a separate bowl. Reserve chicken. Heat a large pot over medium heat and add the sugar. Cook until it begins to caramelize. Add the peaches to the sugar and coat to combine. Cook for 30 seconds before adding the bourbon. Cook for 2 minutes, until bourbon is evaporated. Pour in the reserved chicken juices, onion and peach juice. Stir well and cook for 15 minutes, until the sauce is thick and syrupy. Season with salt and pepper.
  • Let the sauce sit off of the heat for 3-5 minutes. Plate the chicken on a serving platter and pour the bourbon peach glaze over. Enjoy!
