I was looking for a new way to cook Brussels sprouts. This soup is one of my favorite ways now.

Steps:
- Combine oil and onions in a pot over low heat. Cover and cook until very tender and soft, 30 to 40 minutes. Remove cover and sprinkle sugar over onions. Cook, uncovered, until onions are light brown, 10 to 15 minutes more.
- Stir Brussels sprouts and thyme into the pot. Pour in stock and season soup with salt and pepper. Bring to a boil, reduce heat, and simmer until sprouts are just tender, about 10 minutes.
- Allow soup to cool slightly. Blend to a smooth consistency using an immersion blender. Reheat gently, about 2 minutes, and adjust seasoning if necessary.
- Top each portion of soup with a spoonful of sour cream and a dash of hot pepper sauce.

Here is an easy way to dress up brussel sprouts. If you like brussel spourts this is for you. I can't promise to make you love brussel sprouts if you don't already but I do encourage you to try them this way. Fresh sprouts make a difference.

Steps:
- Trim the root end off the sprouts, peel off the first layer of leaves and cut each one on half.
- Heat butter and oil in a large frying pan until the butter just starts to brown. Add the sprouts being careful not to get splattered with hot oil.
- Stir or toss frequently until the sprouts are nicely browned.
- Add the water and soup mix and simmer uncovered for about 7 minutes. Taste a sprout and season to taste with salt and pepper.

- "Take Brussels sprouts, fresh or frozen, & boil in water on stove until you can poke a fork through them easily, about 8 minutes. While you're waiting, slice up mushrooms & chop onions. Onions should be about 1/4 inch wide, and about an inch in length. When the Brussels Sprouts are done, cut off the ends, & slice in half. Melt butter in a medium sized skillet on medium heat on the stove. When the butter is done melting, add Brussels sprouts, mushrooms & onions. Sauté until sides of the Brussels Sprouts are browned. Add both wines & continue cooking for a few more minutes, until there's not much liquid left on the bottom of the skillet. Salt & pepper to taste. Onions should still have a slight crunch to them."
