MAKE YOUR OWN ONION AND GARLIC INFUSED OIL – JOANNE RANKIN ...

Number Of Ingredients 3

1 cooking onion, peeled and chopped
1 head of garlic, cloves separated, peeled and chopped
2 cups olive oil

Steps:

  • In a heavy-bottomed pan, add 1/4 cup olive oil and the chopped onion. Turn up the heat until the onion is almost sizzling.
  • Stirring frequently, and adjusting the heat as needed to keep the oil almost simmering, cook the onion until it is a rich golden colour. (Don’t let the onion get dark brown as this can become bitter).
  • Add the garlic and the remainder of the oil.
  • Increase the heat until the oil is almost simmering, then turn down heat just enough so it continues to barely simmer for 20 minutes
  • Remove from the heat. 
  • Remove the garlic and onions by pouring the oil through a fine sieve placed on top of a screw-top jar
  • Cover and refrigerate the oil once it’s cool. Discard the onion and garlic.

I came up with this simple, wonderful recipe through trial and error. It really hits the spot and only take minutes to make. My whole family loves it - even my picky 5 year old! So quick, so easy! Garnish with grated Parmesan cheese.

½ cup olive oil
4 tablespoons butter
5 onions, thinly sliced
1 teaspoon dried basil
1 pinch ground black pepper
1 cup water
1 tablespoon chicken bouillon
1 pound uncooked pasta, cooked according to package directions

Steps:

  • In a large skillet place oil, butter and onions and cook until golden brown.
  • Add basil, pepper, water and bouillon and cook on low heat for 10 minutes.
  • Add onion mixture to cooked pasta, sprinkle with cheese, toss and serve.
