One-Pot Caprese Bowtie Pasta - Recipes - Faxo image

This is a delicious one pot vegetarian meal that will please the whole family or even guests. Put first 8 listed ingredients in the pot, cook, garnish and you are ready to eat.

Number Of Ingredients 13

4-1/2 c. water
3 T. olive oil
1 lb. farfalle (bow tie) pasta
1 pint grape or cherry tomatoes, halved
½ c. basil leaves, packed
4 garlic cloves, minced
salt, to taste
freshly ground black pepper, to taste
1-1/2 c. part skim shredded Mozzarella cheese
fresh mozzarella cheese balls
fresh basil leaves, chopped for garnish
freshly grated Parmesan cheese, for garnish, optional

Steps:

  • Combine water, olive oil, pasta, halved tomatoes, basil leaves, garlic, salt and pepper in a large stock pot. Cook over high heat and bring to a boil. Reduce heat to a simmer. Cook 11 to 12 minutes, or until pasta is thoroughly cooked and water reduced, stirring occasionally. Remove from heat; let stand 2 minutes. Stir in shredded Mozzarella cheese; stir until thoroughly combined. Taste for salt and pepper; adjust accordingly. Garnish with balls of fresh mozzarella cheese and fresh basil. Garnish with grated Parmesan cheese, optional. Serve immediately.

1 lb. White Or Baby Bella Mushrooms, Sliced
12 oz. weight Bowtie Pasta
4 cloves Garlic, Smashed And Peeled And Then Thinly Sliced
1/2 tsp. Kosher Salt
1/4 tsp. Black Pepper
2 tbsp. Olive Oil
3 1/2 c. Water
1 lb. Asparagus, Ends Trimmed And Cut Into 6 Or 8 Even Pieces
2 tbsp. Salted Butter
1/4 c. Heavy Cream
Freshly Grated Parmigiano-Reggiano Cheese, For Serving
Cooked Bacon, Crumbled, For Serving (optional)

Steps:

  • Add mushrooms, bowtie pasta, garlic, salt, pepper, water and olive oil to a large sauce pan. Bring to a boil over high heat. Cook pasta, stirring constantly, for about 5 to 6 minutes and then add asparagus.Cook for another 3 to 4 minutes and then add butter and heavy cream. Lower heat to low, mix thorough and continue cooking until pasta is al dente, another 2 to 3 minutes. Season with salt and pepper to taste if necessary.Recipe inspired by Martha Stewart's One-Pot Penne Pasta.

Drain pasta; add to sausage mixture. Stir in peas and cheese; cook until cheese is melted.
    Freeze option: Cool pasta; transfer to freezer containers. Freeze for up to 3 months. To use, thaw in refrigerator overnight. Place in a Dutch oven; heat through. Sprinkle with additional cheese.
