Caramelized Pork Loin with Apples Recipe | MyRecipes image

Make a low-fat pork entree that's perfect for entertaining by roasting a pork loin in a mixture of brown sugar, butter, and apples. Note that the sugar coating can burn if the roast isn't turned often enough.

Yield 12 servings (serving size: 3 ounces pork with apples and onion)

Number Of Ingredients 13

2 tablespoons packed brown sugar
1 teaspoon ground cumin
¾ teaspoon salt
⅛ teaspoon ground red pepper
⅛ teaspoon black pepper
1 garlic clove, minced
1 (2 1/2-pound) boneless pork loin, trimmed
Cooking spray
2 medium onions, cut into wedges
⅓ cup balsamic vinegar
2 tablespoons butter
2 Granny Smith apples, cut into wedges
2 Rome apples, cut into wedges

Steps:

  • Preheat oven to 425°.
  • Combine first 5 ingredients in a small bowl.
  • Rub garlic over surface of trimmed pork loin. Heat a large skillet coated with cooking spray over medium-high heat. Add pork and onion; cook 10 minutes or until browned on all sides, turning occasionally.
  • Place the pork in a 13- x 9-inch baking dish coated with cooking spray. Sprinkle the sugar mixture over roast. Arrange the onion around pork, and drizzle with vinegar. Bake at 425° for 20 minutes.
  • Melt butter in a large skillet over medium-high heat; add apples, and sauté 5 minutes or until golden.
  • Remove the pork from oven, and arrange apples around pork; reduce heat to 350°, and cook an additional 20 minutes or until pork is done.
  • Pour pan drippings into a medium saucepan, and cook over medium-high heat until reduced to 1/3 cup (about 14 minutes). Drizzle over pork, apples, and onion.

These delicious pork chops are browned in butter then simmered in a homemade country gravy until done. The five-ingredient gravy would go well over pan-sautéed or oven-fried chicken. It's also great over an open-faced turkey sandwich.

Yield 4 servings (serving size: 1 pork chop, 2/3 cup potatoes, and 1/4 cup gravy)

Number Of Ingredients 8

¾ teaspoon salt, divided
4 (4-ounce) boneless center-cut loin pork chops (about 1 inch thick)
1 teaspoon butter
1 ⅓ cups 1% low-fat milk
3 tablespoons all-purpose flour
¼ teaspoon poultry seasoning
¼ teaspoon black pepper
1 (20-ounce) package refrigerated mashed potatoes (such as Simply Potatoes)

Steps:

  • Heat a large nonstick skillet over medium-high heat. Sprinkle 1/4 teaspoon salt evenly over both sides of pork. Add 1 teaspoon butter to pan, stirring until butter is melted. Add the pork to pan, and cook pork for 3 minutes on each side. Remove pork from pan, and keep warm.
  • Combine low-fat milk and flour, stirring with a whisk. Add the milk mixture to pan, stirring with a whisk. Stir in remaining 1/2 teaspoon salt, poultry seasoning, and black pepper. Return pork to pan. Cover; reduce heat, and simmer for 7 minutes or until gravy is thick and pork is done.
  • While pork cooks, prepare potatoes according to package directions. Serve with pork.
