2 slices rye bread
1 -2 tablespoon spicy mustard
6 ounces sliced pastrami (more, if you can handle it)

Steps:

  • Butter both slices of bread and toast until golden.
  • Spread mustard on both slices.
  • Warm pastrami in a hot skillet until heated through.
  • Pile on top of one slice of the bread and carefully close the sandwich.
  • To make a cold pastrami sandwich, skip buttering and toasting the bread and place meat cold on the sandwich.

Colleen's directions for this classic deli-style Reuben sandwich are easy to follow and the outcome is one yummy sandwich. We used a good quality deli sliced corned beef and Swiss for testing. The grainy rye bread is perfect with the tangy sauerkraut and sweet Thousand Island dressing. Corned beef and melted Swiss cheese is a perfect combo. The whole sandwich is a perfect marriage of flavors. If you have leftover corned beef, this Reuben sandwich is a great way to use it.

BREAD
2 slice(s) marbled rye, dark rye bread, any rye bread, pumpernickel (your choice)
- softened butter
SANDWICH FILLINGS
5 - 7 slice(s) corned beef (sliced thin)
4 - 5 tablespoon(s) sauerkraut (drained, squeezed very well)
2 slice(s) Swiss cheese (sliced thin)
1 tablespoon(s) Thousand Island dressing

Steps:

  • Butter one side of each slice of bread.
  • Place one slice, buttered side down, in a skillet. Put corned beef on bread.
  • Add the sauerkraut on top of the corned beef.
  • Put the cheese slices on the sauerkraut.
  • Then add the Thousand Island dressing on top of the cheese.
  • Put the second slice of buttered bread on top buttered side up.
  • Cook over medium-high heat on both sides, like you would do to make a grilled cheese sandwich.
  • Cut on an angle. Serve with french fries or potato chips and a big old dill pickle! Yum!

  • Butter both sides of 8 slices of rye bread. Place 4 slices in a frying pan, butter side down.  Top each slice with Swiss cheese, then Black Forest Ham. Place slice of rye on top, butter side up.  Cook until both sides of the bread are golden brown and the cheese has begun to melt. For the potato salad: Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 30 minutes. Drain, cool and slice thin.  Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside, reserving drippings.  Sauté onions in bacon drippings until they are golden-brown.  In a small bowl, whisk together the flour, sugar, salt, celery seed, and pepper.
