Russian Salad is known by several names such as "Ensalada Rusa" or "Olivier Salad" or "Salad Olivieh". This is a simple salad invented in the 18th century by Lucien Olivier and widely recreated throughout Eastern Europe. Over the course of the centuries, different regions of Eastern Europe have developed their own variations of this salad but few core ingredients are common to them all: potatoes, eggs, carrots, pickles, onions, peas, and a mayonnaise-based dressing.

3 Potatoes (Yellow, medium size, boiled, chopped)
3 Carrots (Medium size, boiled, chopped)
6 Eggs (boiled, chopped)
3 Pickles in Brine (Medium size, peeled, chopped)
1/2 Sweet Onion (Large or one small, chopped)
1 can Peas (15 oz., rinsed)
1 cup Mayonnaise
1 tbsp Dijon Mustard (or other preferred mustard)
Salt and Pepper to taste

Steps:

  • Place eggs in a pot of cold water. Bring to boil and cook for 10 minutes. Remove the eggs from the water and let them fully cool off before peeling.
  • Place whole, unpeeled potatoes, and carrots in a pot of water. Add a teaspoon of salt and bring to boil. Cook until vegetables are fork tender for about 20-25 minutes. Remove from water and let cool off fully before peeling.
  • Peel and chop the pickles (peeling is optional; I feel like they taste better in this salad without tough skin).
  • Chop the onions.
  • Strain and rinse canned peas.
  • Peel and chop into cubes eggs, potatoes, and carrots (if using, cube your ham too).
  • Place all the ingredients into a large bowl and mix all together.
  • In a small bowl combine mayonnaise with mustard and pepper. Add it into the salad ingredients and mix all together.

6 eggs
4 celery stalks
10 pounds russet potatoes
3 teaspoons salt
2 tablespoons prepared mustard
3 tablespoons dill relish
5 tablespoons real mayonnaise
Freshly ground black pepper

Steps:

  • In a large pot, hard-boil the eggs. Drain and cool, then shell and dice the eggs.
  • Dice the celery stalks, and place to the side with eggs.
  • In a large pot, boil whole potatoes until fully cooked. Drain water. Let potatoes cool and then peel. In a large bowl crumble or mash potatoes.
  • Add all remaining ingredients, including the eggs and celery, and mix. Serve immediately, or refrigerate until serving time.

    1. Peel the potatoes using a speed-peeler, then carefully cut them into thin slices. Pat the potato slices dry with a clean tea towel.
    2. Peel and finely slice the onion. Drizzle 2 tablespoons of oil into a small frying pan over a medium heat, then add the onion and potatoes.
    3. Turn the heat down to low and cook for 25 to 30 minutes, or until the onions are turning golden and the potato slices are cooked through. Try not to stir it too much or the potatoes will break up – just use a fish slice to flip them over halfway through.
    4. Crack the eggs into a mixing bowl, season with a tiny pinch of sea salt and black pepper, then whisk together with a fork.
    5. When the onions and potatoes are cooked, remove the pan from the heat and carefully tip them into the eggs. Transfer the mixture back into the frying pan and place it over a low heat. Cook for around 20 minutes, or until there’s almost no runny egg on top.
    6. Use a fish slice to slightly lift and loosen the sides of the tortilla. Carefully flip the pan over a dinner plate and tip out the tortilla, then slide it back into the pan and cook for another 5 minutes, or until golden and cooked through.
    7. Turn out the tortilla onto a serving board, then cut into 6 wedges and serve hot or cold with a simple green salad.
