1/2 oz.

dry vermouth

Olives or lemon twist, for garnish

Steps:

  • Fill a cocktail shaker with ice. Add the gin or vodka and vermouth and stir for 30 seconds or shake vigorously for 10 seconds. Strain into a chilled martini glass. Garnish with olives or a lemon twist.

This twist on a dirty martini comes from Crouch End restaurant, Kalimera. It incorporates flavours of Kalamata olives with roasted Florina pepper and thyme

roasted Florina pepper or roasted red pepper 1 slice
kalamata olives pitted and sliced to make 1 tsp, plus 2 whole stone-in olives
thyme 2 sprigs
vodka 50ml
Lillet Blanc 25ml

Steps:

  • Put the pepper, olives and one sprig of thyme in a shaker, muddle the ingredients and add the vodka and Lillet Blanc. Shake, then fill the shaker with ice and shake vigorously twice, then fine strain and pour into a martini glass.
  • Put the whole Kalamata olives on a cocktail stick and use to garnish the drink along with the remaining sprig of thyme.
