This garlic and herb mixture is a flavor bomb. When topped with olive oil, it turns into a delicious dip for bread. Keep extra olive oil close by, you can always top up the plate with more.

Ingredients

2 garlic cloves, or more depending on how garlicky you want it
2 tablespoons capers, drained
1/2 teaspoon dried oregano
2 teaspoons chopped fresh rosemary
2 teaspoons chopped fresh thyme
3 tablespoons finely grated parmesan cheese
Pinch sea salt, if you have it try truffle salt
Fresh ground pepper, to taste
Pinch crushed red pepper flakes, optional to make it spicy
1/2 cup extra-virgin olive oil, plus more as needed
Crusty bread, cubed

Steps:

Finely mince the garlic and capers. Add to a bowl along with the oregano, rosemary, thyme and cheese. Season with a small pinch of salt and pepper. Use the back of a spoon to smoosh the herbs into the garlic and capers.
Make one or two mounds of the garlic-herb mixture on a rimmed plate. Drizzle the olive oil on top. Serve with cubes of bread.

Ingredients

1 tablespoon dried minced garlic
1 tablespoon dried rosemary, crushed
1 tablespoon dried oregano
2 teaspoons dried basil
1 teaspoon crushed red pepper flakes
1/2 teaspoon salt
1/2 teaspoon coarsely ground pepper
ADDITIONAL INGREDIENTS (for each batch):
1 tablespoon water
1/2 cup olive oil
1 French bread baguette (10-1/2 ounces)

Steps:

In a small bowl, combine the first 7 ingredients. Store in an airtight container in a cool, dry place for up to 6 months. Yield: 3 batches (1/4 cup total)., To prepare dipping oil: In a small microwave-safe bowl, combine 4 teaspoons herb mix with water. Microwave, uncovered, on high for 10-15 seconds. Drain excess water. Transfer to a shallow serving plate; add 1/2 cup oil and stir. Serve with bread.

1. Preheat the oven to 180C/350F/gas 4.
2. On a chopping board, cut the aubergines in half lengthways.
3. Score the flesh sides in a crisscross pattern, making sure you don’t cut through the skins.
4. Drizzle with 2 tablespoons olive oil, then toss to coat.
5. Arrange on a baking tray, flesh-side facing up, then bake in the oven for around 45 minutes, or until soft.
6. Using oven gloves, remove the aubergine from the oven, then leave aside to cool.
7. Peel and roughly chop the garlic, then place in a food processor.
8. Add the tahini, chilli powder (if using), cumin, 2 tablespoons extra virgin olive oil and the aubergine, discarding the skin.
9. Cut the lemons in half. Squeeze in the juice, using your fingers to catch any pips.
10. Secure the lid and blitz to a nice thick dip.
11. Have a taste and add a tiny pinch of salt and pepper, if you think you think it needs it.
12. Transfer to a bowl, to serve.

Cut a slit from the top to bottom of 12 jumbo olives; set aside. In a bowl, combine the next six ingredients; mix well. Fill a small heavy-duty plastic bag with cream cheese mixture. Cut a small hole in the corner of the bag; carefully pipe mixture into jumbo olives. Set aside. Cut a small triangle out of each carrot slice; press triangles into small olives for a beak. On a each notched carrot slice, position a jumbo olive so the white chest is lined up with the notch. Place the small olive, hole side down, over the jumbo olive so the beak, chest and feet are aligned. Carefully insert a toothpick through the top of head into body and carrot base. Wrap a pimiento around neck for a scarf.
