Stirring continuously, cook until the sugar dissolves and mixture foams to a boil. Cook, stirring frequently, until mixture begin to take on a golden amber color, about 7 to 8 minutes. (The mixture will froth and foam, double in volume, and then gradually subside.) Remove from heat, stir down and add vanilla. Mix until all foam and bubbles disappear.
