this was my grandmothers recipe for shortbread just three ingredients made when you had to make the most of what you had. hence the three ingredients.

Cook Time 30 minutes

Number Of Ingredients 3

4 ounces plain flour
2 ounces caster sugar
3 ounces unsalted butter

Steps:

  • Mix flour and sugar together.
  • Rub in the butter untill it comes together and makes a smooth dough.
  • Roll out between parchment paper about half an inch thick, or use a shortbread mould if you have one.
  • Place on a greased baking tray.
  • Prick with a fork to decorate and flute the edges if you wish.
  • Bake for 25/30 minutes at 175c.
  • Dust with a little castor sugar while cooling.

Number Of Ingredients 3

2 cups butter, softened
1 cup packed brown sugar
4 to 4-1/2 cups all-purpose flour

Steps:

  • Preheat oven to 325°. Cream butter and brown sugar until light and fluffy, 5-7 minutes. Add 3-3/4 cups flour; mix well. Turn dough onto a floured surface; knead for 5 minutes, adding enough remaining flour to form a soft dough. , On a sheet of parchment paper, roll dough to a 16x9-inch rectangle. Transfer to a baking sheet, and cut into 3x1-in. strips. Prick each cookie multiple times with a fork. Refrigerate at least 30 minutes or overnight. , Separate cookies and place 1 in. apart on ungreased baking sheets. Bake until cookies are lightly browned, 20-25 minutes. Transfer to wire racks to cool completely.

  • Place the flour, butter and caster sugar in a large bowl or food processor, Rub the butter into the dry ingredients or whizz together until it resembles breadcrumbs. Pat together to form a ball.

    On a lightly floured surface, roll the biscuit dough out to a circle measuring 15 cm. Carefully lift the disc onto a non- stick baking sheet.

    Crimp the rim with your fingers to create a fluted edge, mark into 8 triangles and then prick all over with a fork. Sprinkle with demerara sugar, then chill for 20 minutes. Preheat the oven to 180°C, fan 160°C, gas 4.

    Bake for 20-25 minutes, until just turning golden. Remove from the oven and leave to stand for 5 minutes, carefully cut to create 8 wedges. Cool the biscuits on a wire rack.
