6 bacon strips, cut into 1/2-inch pieces
2 pounds fresh green beans
3 tablespoons brown sugar
1/2 cup water

Steps:

  • In a large cast-iron or other heavy skillet, cook bacon over medium heat until crisp, about 5 minutes. Add the beans, brown sugar and water. Stir gently; bring to a boil. Reduce heat; cover and simmer until beans are crisp-tender, 15 minutes. Remove to a serving bowl with a slotted spoon.

½ pound double-smoked bacon, diced*
1 medium onion, chopped
3 pounds green beans, trimmed
1 teaspoon dried crushed red pepper
1 teaspoon salt
2 tablespoons unsalted butter, softened
2 to 3 Tbsp. cider vinegar

Steps:

  • Cook bacon in a Dutch oven over medium heat 10 minutes or until browned and crisp. Add onion, and sauté 5 minutes or until tender. Stir in green beans, red pepper, and salt. Add enough water to cover green beans. Bring to a boil; cover, reduce heat, and simmer 40 to 45 minutes or until beans are very tender. Drain beans, and transfer to a bowl. Add butter and vinegar; toss well. Serve hot.
