Yield 6 servings (2-1/2 cups dressing).

1-1/2 cups mayonnaise
2/3 cup heavy whipping cream
1/2 cup chopped green onions
1/2 cup minced fresh parsley
1 can (2 ounces) anchovy fillets, drained, optional
2 tablespoons minced chives
2 tablespoons lemon juice
2 pounds fresh asparagus spears, trimmed

Steps:

  • In a blender, combine the first seven ingredients; cover and process until smooth. Cover and refrigerate for at least 1 hour. , In a skillet, cook asparagus in a small amount of water for 3-4 minutes or until crisp-tender; drain well. Spoon dressing over asparagus. Refrigerate leftover dressing.

Yield Makes about ½ cup

Number Of Ingredients 7

1 large egg yolk
1 garlic clove, finely chopped
2 tablespoons Sherry vinegar
½ cup olive oil
½ cup (packed) fresh dill leaves
½ cup (packed) fennel fronds
Kosher salt, freshly ground pepper

Steps:

  • Pulse egg yolk, garlic, and vinegar in a food processor until smooth. With motor running, gradually drizzle in oil and process until emulsified. Add dill and fennel and process, adding water by the tablespoonful as needed, until dressing is the consistency of heavy cream; season with salt and pepper.
