For a win-win breakfast, try adding leftover cooked oatmeal to your pancakes. It gives them an extra boost of whole-grain goodness while also using up those leftovers. The addition contributes a hearty, nutty flavor and gives the pancakes a creamy texture inside. If you don’t have white whole-wheat flour on hand, regular whole-wheat flour will work well, too. If you want to substitute whole-wheat pastry flour, you’ll likely need to add an extra couple tablespoons to ensure the batter isn’t too thin.

1 large egg(s) Egg(s) lightly beaten
2 tsp Powdered sugar (confectioner's)
1 cup(s) Fresh raspberries
1 cup(s), raw Strawberries sliced

Steps:

  • In a medium bowl, whisk together the flour, baking powder, granulated sugar, cinnamon, and salt. In another medium bowl, whisk together the oatmeal, milk, and egg. Add the oatmeal mixture to the flour mixture and stir until just combined.
  • Coat a large nonstick griddle or nonstick skillet with cooking spray. Heat the griddle or pan over medium. Scoop ¼ cup batter per pancake onto the griddle or pan to yield 8 pancakes. Cook until the tops of the pancakes are covered with bubbles and the edges look cooked, 3 to 4 minutes. Carefully flip the pancakes over; cook until done, about 3 to 4 minutes. Sprinkle the pancakes with powdered sugar; top with the berries.
  • Serving size: 2 pancakes and ½ cup berries

2 tablespoons unsalted butter
1/2 cup sugar
1/2 cup brown sugar
1 banana, very ripe
1 egg
1 teaspoon vanilla
1 cup flour, fluffed to aerate before measuring
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon salt
1 1/2 cups oatmeal (old-fashioned or quick)
1 cup coconut, preferably unsweetened

Steps:

  • Preheat oven to 350°F
  • Melt butter in a small dish in microwave, 10 seconds at a time.
  • Transfer to mixing bown.
  • With an electric mixer, thoroughly mix in sugars, banana, egg and vanilla.
  • Mix together flour, baking powder, baking soda, cinnamon, salt.
  • Mix in to the banana mixture.
  • Mix in oatmeal and coconut.
  • Drop dough by tablespoons onto a baking sheet lined with parchment.
  • Bake for 11-14 minutes until set and golden.
  • Cool 5 minutes and remove from tray right away to a cooling rack.
