My family loves these big old-fashioned cinnamon oatmeal cookies. They’re crisp, yet still chewy in the center, and the cinnamon makes them a little different from typical oatmeal cookies.

1 cup butter, softened
1 cup sugar
1 cup packed brown sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon baking powder
1/2 teaspoon salt
3 cups quick-cooking oats

Steps:

  • In a large bowl, cream butter and sugars until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. Combine the flour, baking soda, cinnamon, baking powder and salt; gradually add to creamed mixture and mix well. Stir in oats. , Shape into 1-1/2-in. balls. Place 2 in. apart on ungreased baking sheets. Bake at 350° for 10-12 minutes or until golden brown. Cool for 1 minute before removing to wire racks.

2 cups flour
1 tbsp McCormick® Cinnamon, Ground
1 tsp baking soda
1/2 tsp salt
1 cup (2 sticks) butter softened
1 cup firmly packed light brown sugar
1 cup granulated sugar
2 eggs
1 tsp McCormick® Pure Vanilla Extract
2 cups quick-cooking oats
1 cup raisins

Steps:

  • Preheat oven to 350°F. Mix flour, cinnamon, baking soda and salt in medium bowl. Set aside. Beat butter and sugars in large bowl with electric mixer on medium speed until light and fluffy. Add eggs and vanilla; mix well. Gradually beat in flour mixture on low speed until well mixed. Stir in oats and raisins.
  • Drop by rounded tablespoons onto ungreased baking sheets. Stir in oats and raisins.
  • Bake 10 to 12 minutes or until lightly browned. Cool on baking sheets 1 minute. Remove to wire racks; cool completely.
