These little bars are great to snack on, are perfect at holiday time, and would be excellent for a cookie exchange. If you have leftover dough after forming the bars, don't worry, I find that the thinner the crust, the better.

2 cups fresh or frozen cranberries
¾ cup sugar
2 tablespoons orange zest
1 ½ cups all-purpose flour
1 ½ cups rolled oats
1 cup packed light brown sugar
1 teaspoon baking powder
½ teaspoon salt
¾ cup butter

Steps:

  • In a small saucepan over medium high heat, combine the cranberries, white sugar and orange zest. Bring to a boil, then reduce heat and cook until the mixture has reduced to about 1 cup.
  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9 inch baking pan, line with foil, then grease the foil.
  • In a medium bowl, stir together the flour, oats, brown sugar, baking powder and salt. Cut in the butter using your hands or a pastry blender until the mixture resembles coarse crumbs. Press half of this mixture firmly into the prepared pan. Spread the cranberry sauce evenly over the base, then crumble the remaining oat mixture over the top.
  • Bake for 10 to 15 minutes in the preheated oven, until the top is golden brown. Cool completely before cutting into bars.

Easy and delicious fruit and oat bars that the kids can make themselves. The bars can easily be made gluten-free or vegan, if required. Each serving provides 195 kcal, 6g protein, 22g carbohydrates (of which 10.5g sugars), 8.5g fat (of which 2g saturates), 3g fibre and trace salt.

150g/5½oz peanut butter
150g/5½oz honey or agave syrup
2 tsp vanilla extract
200g/7oz porridge oats, gluten-free if required
50g/1¾oz brown puffed rice or puffed oats, gluten-free if required
75g/2½oz pumpkin seeds
125g/4½oz dates, roughly chopped

Steps:

  • Grease and line a 30 x 23cm deep tin with baking paper.
  • Put the peanut butter, honey and vanilla extract in a large microwaveable bowl and microwave for 45 seconds. Stir well and heat for another 10 seconds, until melted and smooth. Stir in the remaining ingredients until everything is fully coated.
  • Tip into the prepared tin and press down evenly with wet hands. Refrigerate for at least 2 hours or until solid.
  • Slice into 24 bars. Transfer to a sealed container and keep in the fridge for up to 1 week.

Cut in the butter with a pastry cutter until it resembles coarse crumbs. Sprinkle half the mixture into the pan and pat lightly to pack it a little tight. Spoon strawberry preserves evenly over the surface, then use a dinner knife to carefully spread it around. Sprinkle the other half of the oat mixture over the top and pat lightly again. Bake until light golden brown on top, about 35 to 40 minutes. Remove from the oven and let cool in pan. When cool, cut into squares and serve. Yum!

    1. Preheat the oven to 180ºC/350ºF/gas 4. Lightly grease a 22cm-square baking dish with oil, then set aside.
    2. Roughly chop and add the almonds to a large baking tray with the oats and seeds. Spread them out into an even layer and place in the hot oven for 12 to 15 minutes, or until golden, stirring halfway through.
    3. Gently heat the honey and nut butter in a small pan over a low heat. Meanwhile, slit open the dates, pull out and discard the stones, then place into a blender with 100ml of warm water.
    4. Blitz to a paste, stir into the warmed honey mixture, then leave to cool.
    5. Transfer the toasted oat mixture to a large bowl with the bran, cinnamon and salt. Roughly chop and stir in the dried fruit, then mix in the honey mixture until well combined.
    6. Spoon it into the prepared baking dish, using the back of a spoon to press it into an even layer.
    7. Bake in the hot oven for 15 minutes, or until golden and set.
    8. Leave to cool slightly, turn it out onto a board and cut into squares, then set aside to cool completely. Store in an airtight container.
