A delicious cake made with a almond pie crust, vanilla mascarpone cream and fruits. Be ready to make the best birthday cake !

Number Of Ingredients 15

1/2 cup softened butter (120 gr)
2/3 cup icing sugar (80 gr)
1 oz powdered almonds (25 gr)
2 tsp vanilla sugar
1 pinch of salt
1 egg
1.5 cups flour (200 gr)
0.5 lb mascarpone
1 vanilla bean
1/2 cup icing sugar
1.5 cup cream
4.5 oz raspberries
4.5 oz strawberries
10 little meringues
green almond paste

Steps:

  • Pie crust : Put softened butter+ icing sugar + salt + almond meal into the bowl and mix. Then add egg and beat together until combined.
  • Now, add the flour and use your hands to mix until the dough become uniform. Do not over-knead! Now, wrap it in plastic wrap and refrigerate for one hour.
  • Remove dough from refrigerator, remove the plastic and divide batter into 2 pieces. Take one and place it on a baking sheet.
  • Draw or print in a A4 sheet the shape of your numbers, cut it and place it onto the rolled dough. Then, use a knife to trim the number shape but don't remove leftover dough just slash it. Do it 2 times and repeat with the second number.
  • Right away, store in the fridge for up to 30 min before removing the leftover (this will make it more workable).
  • Bake at 180°C (350°F) for 12 minutes. Remove from the oven and set aside to cool.
  • Mascarpone cream : Scrape the seeds out of the vanilla bean using the knife blade. In a large and cold bowl, whisk together: mascarpone cheese + cold heavy whipping cream + vanilla seeds + icing sugar. Beat whipping cream at maximum speed.
  • Transfer the 1st number crust onto a serving dish/plate and pipe the whipped cream. Pipe and pull, covering the entire surface of the crust. Place the second layer of crust over it and apply another layer of whipped cream all over the crust.
  • Repeat with the other number. Don't worry if it breaks, nobody will notice ;-)
  • Wash your fruits and put them on the cream. Add little meringues.
  • Spread your almond paste and use a cookie cutter to cut the shapes you want. Put them on top of the number cake.
  • There you are, your number cake is ready !

(3 sticks) butter, softened 

6 c.

powdered sugar 

3/4 c.

unsweetened cocoa powder 

1 tsp.

pure vanilla extract 

Pinch kosher salt

Steps:

  • Preheat oven to 350º and line two 9"-x-13” pans with parchment paper. Prepare cake mixes according to package directions and bake until a toothpick inserted in the center comes out clean, about 25 minutes. Let cool.  Make buttercream: In a large bowl using a hand mixer or in bowl of a stand mixer using the paddle attachment, beat butter until fluffy. Add powdered sugar and beat until combined, then add cocoa powder, vanilla, and salt and beat until combined. (If you desire a thinner consistency, add 1 more tablespoon cream.) When cakes are cool, flip onto a cutting board level them with a serrated knife. Stack one on top of the other and cut out desired number. Discard scraps, or save them for another use. Unstack cakes and pipe or spread a thick layer of buttercream on top of one of the cakes. Stack with second cake and again frost top with buttercream. Garnish with candy of your choice.
