NORMANDY BLEND CASSEROLE - HY-VEE RECIPES AND IDEAS

Hy-Vee Select Normandy Blend vegetables are combined with a variety of cheeses and other flavors for a family-sized comforting casserole!

Number Of Ingredients 8

1 (32 oz) bag Hy-Vee Select Normandy blend vegetables
1 c. of sliced fresh mushrooms
2 c. of Hy-Vee shredded cheddar cheese
1 c. of Hy-Vee butter, melted
0.5 c. of Hy-Vee grated Parmesan cheese
1.333 c. of Hy-Vee seasoned bread crumbs
0 Hy-Vee salt and Hy-Vee pepper
1 tsp. of Hy-Vee ground mustard

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2.

    In a medium saucepan, bring 2 inches of water to a boil. Add vegetables and mushrooms. Cover. Cook for 5 minutes. Drain.

  • 3.

    Stir together vegetables and shredded cheese. Pour into a greased 9-by-13-inch baking dish.

  • 4.

    In a medium bowl, stir together butter, Parmesan cheese, bread crumbs, salt, pepper and mustard.

  • 5.

    Sprinkle mixture over vegetables. Bake for 20 minutes or until cheddar cheese is melted and top is golden.

2 packages (16 ounces each) frozen California-blend vegetables
8 ounces process cheese (Velveeta), cubed
6 tablespoons butter, divided
1/2 cup crushed butter-flavored crackers (about 13 crackers)

Steps:

  • Prepare vegetables according to package directions; drain. Place half in an ungreased 11x7-in. baking dish. In a small saucepan, combine cheese and 4 tablespoons butter; cook and stir over low heat until melted. Pour half over vegetables. Repeat layers., Melt the remaining butter; toss with cracker crumbs. Sprinkle over the top. Bake, uncovered, at 325° for 20-25 minutes or until golden brown.
