This simple recipe came from the Polish side of my family. We simply called it 'cottage cheese and noodles' or 'lazy man pierogies.' It's a great comfort food and can be made with any kind of noodle. It could be a side dish, but we always enjoyed it as a meal.

½ cup butter
1 small onion, diced
1 (16 ounce) package egg noodles
1 (16 ounce) package cottage cheese
½ cup sour cream
½ teaspoon sea salt
¼ teaspoon ground black pepper

Steps:

  • Melt butter in a saucepan over medium heat. Cook and stir onion in melted butter until softened, 7 to 10 minutes.
  • Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally until cooked through but firm to the bite, about 5 minutes. Drain and return to the pot.
  • Stir butter and onion mixture, cottage cheese, sour cream, sea salt, and black pepper into the noodles. Place the pot over medium heat; cook and stir until heated through and warm, 5 to 8 minutes.

When it comes to our favorite comfort foods like pasta, the third cheese's the charm. We grabbed three highly flavorful cheeses—asiago, provolone and parmesan—and created this perfect cold-weather dish with No Yolks noodles.

12 oz. No Yolks® Extra Broad Noodles
2 tbsp. extra-virgin olive oil
2 cloves garlic, minced
3/4 c. heavy cream
3/4 c. low-sodium chicken broth
1/2 c. Parmesan, shredded
1/2 c. provolone, shredded
1/2 c. Asiago, shredded
kosher salt
Freshly ground black pepper
Chopped fresh parsley, for garnish

Steps:

  • In a large pot of salted boiling water, cook No Yolks noodles according to package directions. Drain, reserving ½ cup cooking water, and return to pot. Meanwhile, in a large skillet over medium heat, heat oil. Add garlic and cook until fragrant, 1 minute, then add heavy cream, chicken broth, and a splash of cooking water. Add cooked noodles and toss with tongs until noodles are fully coated and liquid is simmering. Remove from heat and add cheese. Toss constantly, adding more cooking water until sauce reaches desired consistency. Season with salt and pepper and garnish with parsley.
