Steps:
- In a saucepan, whisk all the ingredients together. Cover with a lid.
- Place the saucepan over medium heat and bring the mixture to a simmer. Drop the heat to low and let it reduce for 20 minutes.
- Turn off the heat, and remove the cloves.
- Blend the ketchup for 30 seconds to get a silky-smooth texture, transfer to a jar.
- Store the ketchup in the fridge for up to a week.

We enjoy it just as much in spaghetti and enchiladas as tomato sauce. One batch makes the equivalent of 2 larges cans of tomato sauce (4 cups) so I use half the batch and freeze the other half in a freezer bag for next time.
I find that I have to add about 25 percent more spice than I did when I used tomatoes.
