My son took first place in a baking contest with this one. Serve warm or cold plain, with ice cream or whipped cream. When I use apples, a sprinkle of cinnamon or apple pie spice makes a nice touch. In place of peaches, try using apples or plums.

Yield 1 - 9 x 13 inch cobbler

Number Of Ingredients 8

¼ cup butter
1?¼ cups all-purpose flour
1 cup white sugar
1 tablespoon baking powder
¼ teaspoon salt
1 cup milk
½ teaspoon vanilla extract
4 cups fresh peaches, pitted and sliced

Steps:

  • Melt butter or margarine in a 9 x 13 inch pan. Set aside to cool.
  • Stir together flour, sugar, salt, and baking powder. Mix in milk and vanilla. Pour batter over melted butter. DO NOT MIX OR STIR. Spoon fruit with juice over the batter. DO NOT MIX OR STIR.
  • Bake at 350 degrees F (175 degrees C) for 55 minutes.

This was handed down by my Grandmother. You can use any kind of fruit filling. If using cherry, pie filling can be substituted with 2 cups fresh cherries.

½ cup butter
1 cup all-purpose flour
1 cup white sugar
1 teaspoon baking powder
1 cup milk
1 (21 ounce) can cherry pie filling

Steps:

  • Preheat oven to 275 degrees F (135 degrees C). Place butter or margarine in a 9x13 inch baking dish and set on oven rack to melt.
  • In a medium bowl, mix together flour, sugar, and baking powder. Stir in milk.
  • Remove baking dish from oven as soon as butter or margarine is melted. Pour flour mixture into dish, but DO NOT STIR. Pour fruit evenly into pan, and DO NOT STIR.
  • Raise oven temperature to 350 degrees F (175 degrees C). Bake cobbler for 50 to 60 minutes, until golden brown.

  • Make the Topping: Stir cornmeal, flour, sugar, baking powder, cinnamon and salt together in a medium bowl. Cut in the cold butter until small crumbs form (I usually do this by hand, but you can use a pastry cutter). Stir in the buttermilk JUST until combined. Do NOT overmix or you’ll have tough biscuits. The dough will look sticky and lumpy and messy and that’s just right. Chill in the fridge for 5-10 minutes. Make the Filling: In the meantime, add all ingredients for the filling to a greased 3-4 quart slow cooker and stir well. Finish and Cook: Evenly spoon the chilled topping over the apple filling. Cook on HIGH for 2.5 hours, or until the topping is puffy and cooked through, and the filling is bubbly.
