Doc's Best Beef Jerky Recipe | Allrecipes image

I have been making jerky for years. This is my recipe concocted by trial and error. Everyone who has tried it says it is the 'best jerky' they have ever had! My dehydrator is designed for jerky. It takes me about 4 hours to dry the meat. This could also be done in the oven or using other dehydrators. Please check your manual for correct times as each machine is different. I hope you enjoy this jerky as much as me and my family do.

2 pounds beef round steak, cut into thin strips
¼ cup soy sauce
2 tablespoons Worcestershire sauce
2 tablespoons liquid smoke
2 tablespoons brown sugar
2 teaspoons salt
1 teaspoon ground black pepper
1 teaspoon meat tenderizer
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika

Steps:

  • Place beef strips in the bottom of a large bowl. Pour soy sauce, Worcestershire sauce, liquid smoke, brown sugar, salt, pepper, meat tenderizer, garlic powder, onion powder, and paprika over beef. Mix to assure all the meat is evenly coated. Cover and marinate in the refrigerator for 8 hours or overnight.
  • Remove meat from bowl and place between two pieces of plastic wrap; pound to 1/8-inch thickness.
  • Arrange the meat strips on the tray of a dehydrator and dry at your dehydrator's highest setting until done to your liking, at least 4 hours. Store in an airtight container or resealable bags.

Jerky is a purely addictive health snack. Whip up a batch in a fraction of the time using the air fryer.

12 ounces top sirloin beef
1 garlic clove, minced
1 inch piece fresh gingerroot, peeled and grated
2 tablespoons reduced sodium soy sauce
1 tablespoon turbinado sugar
1 tablespoon chili paste (such as Sambal Oelek)
1 tablespoon rice vinegar

Steps:

  • Using a sharp knife, thinly slice beef and place in a resealable bag.
  • In a bowl, combine garlic, ginger, soy sauce, sugar chili paste and rice vinegar; whisk well.
  • Pour marinade into bag, seal and place in the refrigerator for at least 4 or up to 24 hours.
  • When ready to cook, remove pieces of beef from a marinade and pat dry with a paper towel.
  • Preheat air fryer to 160-degrees. Place beef in basket and cook for 3 to 4 hours. Checking the jerky periodically for desired doneness. Allow to cool completely and then store in an airtight container.

The marinating takes 24 hours and the oven drying takes between 6 to 8 hours, so get the sliced beef into the bath in the morning and you’ll be munching on jerky by dinnertime the next day.   • Cut off any excess fat on the slab of beef. Slice the beef into 1/8th inch slices, against the grain. Place in a large gallon zip bag.Add all remaining ingredients to the bag. Zip and massage to mix well. Chill for at least 45 minutes, but up to 24 hours.Preheat oven to 175ºF. Line 3 large rimmed baking sheets with foil. Place a metal rack over the foil on each pan.Lay the beef in a single layer across the racks. Bake for 3 to 4 hours, checking at the 3-hour mark for texture. Let a tester piece cool, then tug and taste. If it’s perfect take all the beef jerky out of the oven. (Bake 2–3 hours in a convection oven.)Store in an airtight container at room temperature for 1 to 2 weeks.
