No Bake Lemon Cheesecake Recipe | Allrecipes image

Light and fluffy no bake cheesecake with a tart lemon taste.

Yield 1 - 10 inch round pan or 9x13 inch pan

Number Of Ingredients 9

3 cups graham cracker crumbs
½ cup butter, melted
1 tablespoon confectioners' sugar
1 (3 ounce) package lemon flavored Jell-O® mix
1 cup boiling water
1 (8 ounce) package cream cheese, softened
1 cup white sugar
1 teaspoon vanilla extract
1 (5 ounce) can evaporated milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). In a medium bowl, combine graham cracker crumbs, butter and confectioners' sugar. Mix well and press into the bottom of a 10 inch springform pan. Bake in preheated oven for 10 minutes. Remove from oven and allow to cool. Turn off oven.
  • Dissolve lemon gelatin in boiling water. Let cool until thick, but not set. In a large bowl, beat cream cheese, white sugar and vanilla until smooth. Set aside.
  • In a separate bowl, whip evaporated milk until thick and stiff peaks form. Pour in lemon gelatin and keep mixing until well blended. Fold in cream cheese mixture.
  • Pour filling into crust. Chill in refrigerator for at least 3 hours before serving.

Delicious Spanish flan, everyone will love it!

Number Of Ingredients 5

1 cup white sugar
3 eggs
1 (14 ounce) can sweetened condensed milk
1 (12 fluid ounce) can evaporated milk
1 tablespoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium saucepan over medium-low heat, melt sugar until liquefied and golden in color. Carefully pour hot syrup into a 9 inch round glass baking dish, turning the dish to evenly coat the bottom and sides. Set aside.
  • In a large bowl, beat eggs. Beat in condensed milk, evaporated milk and vanilla until smooth. Pour egg mixture into baking dish. Cover with aluminum foil.
  • Bake in preheated oven 60 minutes. Let cool completely.
  • To serve, carefully invert on serving plate with edges when completely cool.

Pour into a 8” springform pan and pat into an even layer.  In a medium bowl, beat heavy cream to stiff peaks.  In a large bowl beat cream cheese until light and fluffy. Add pumpkin puree and beat until no lumps remain. Add powdered sugar and beat again until no lumps remain. Add vanilla, cinnamon, nutmeg, and salt and beat until incorporated. Add whipped cream and fold in until just combined. Pour batter over crust and smooth top with an offset spatula.  Refrigerate until set, at least 4 hours and up to overnight.  Serve with whipped cream and crushed gingersnaps.
