0.333 c. of Sola plain Greek yogurt
2 c. of baby spinach
1.5 oz. of Hy-Vee plain cream cheese
0.75 c. of Hy-Vee Select shredded Parmesan cheese
0.333 c. of avocado
1.5 tsp. of garlic paste
0.5 (14-oz.) can Hy-Vee quartered artichoke hearts
0 Shaved Parmesan cheese

Steps:

  • 1.

    Place yogurt, 1 cup spinach leaves, cream cheese, Parmesan cheese, mashed avocado, and garlic paste in a food processor. Cover and process until smooth.

  • 2.

    Place yogurt-spinach mixture in a medium bowl. Fold in artichokes. Place remaining spinach in a microwave-safe bowl. Microwave on HIGH for 30 to 60 seconds or until wilted. Drain spinach and stir into dip mixture. Garnish with shaved Parmesan, if desired.

1 cup mayonnaise

Steps:

  • Combine the artichoke hearts, mayonnaise and Parmesan cheese and mix well. Spread mixture in a 9x13-inch baking dish and bake in the preheated oven for 15 to 20 minutes, or until bubbly and golden brown.
