This stew is from the more European-influenced spectrum of Filipino cuisine. It is quick and easy to make, and it's a great one-dish meal that tastes almost like a rustic chicken soup.

8 chicken drumsticks
4 cups water
1/8 cup fresh ginger, peeled & thinly sliced
1/2 teaspoon peppercorn
1 1/2 tablespoons soy sauce
1 onion, sliced
2 celery ribs, sliced
1 small carrot, peeled & sliced
2 russet potatoes, peeled & chopped into 1-inch pieces
1 tablespoon olive oil
1 napa cabbage, washed & sliced

Steps:

  • Place the chicken in a heavy pan with the water, ginger, peppercorns, soy sauce, carrot, onion, and celery. Boil uncovered over high heat for 25 minutes.
  • While that's cooking, heat the oil over high heat in a large frying pan. Add the potatoes, and saute them for 8-10 minutes, or until they are lightly browned on some sides. Set aside.
  • Add the potatoes and cabbage to the stew. Lower the heat , and simmer for 10 minutes. Mix well, and serve hot and steaming.

Number Of Ingredients 10

2 lbs beef ribs or any beef with bones or beef meat
5 cups water
1 large onion, diced
2 cloves garlic, chopped
1 tsp whole peppercorn
1 Knorr beef cube
2 tbsp fish sauce
Salt and ground pepper to taste
2 medium eggplant, cut into serving size
1 small cabbage, cut in half, remove the hard part

Steps:

  • Rinse beef chunks in water.
  • Place a big pot of water over medium heat.
  • Add beef, onions, garlic, and peppercorns and allow to boil. Skim off extra fat floating the surface.
  • Add beef bouillon with seasoning of fish sauce and allow to simmer until the beef gets tender. Add water if needed.
  • Add more fish sauce, pepper, or salt where needed.
  • Stir in eggplant and continue cooking for 2 minutes.
  • Add cabbage and cook some more - 5 minutes.
  • Remove from heat and immediately serve over hot steamed rice.
