This is an easy baked version of the Chinese New Year cake, which is traditionally steamed and pan-fried with egg. It is mildly sweet, crispy on the outside, and chewy on the inside.

3 large eggs
¾ cup brown sugar
1 (16 ounce) package glutinous rice flour
1 (13 ounce) can coconut milk
1?¼ cups water

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease two nonstick, 8-inch round pans.
  • Beat eggs and brown sugar together in a bowl. Mix in rice flour. Slowly mix in coconut milk and water until batter is smooth. Pour batter evenly into the prepared pans.
  • Bake in the preheated oven until a toothpick inserted into the centers comes out clean, about 45 minutes. Turn on the oven's broiler and broil until light brown, 2 to 3 minutes.

1 bag glutinous rice flour (1 lb)
3/4 cup sugar (150 g, decrease to 1/2 cup if using store-bought red bean paste)
2 cups milk (480 mL)
1/2 can coconut milk (200 mL)
4 eggs
2 tbsp butter (melted (28 g))
1 tablespoon vanilla extract
3/4 unsweetened coconut flakes (90g)
1/2 can red bean paste (optional (can use more if using homemade red bean paste))
almond slices (optional)

  • 1. In a saucepan, boil water and brown slab sugar until the sugar melted. Take it off heat and stir in the coconut cream. Leave to cool. 2. While waiting for it to cool. Cut the parchment paper to fit in the steaming cup that you prepared. I used porcelain ramekins. 3. When cooled, add in the glutinous rice flour and mix into a thick batter. Scoop batter into each ramekin evenly. 4. Steam in high heat for 60 minutes or until cooked. 5. Let it cool on wire rack. Stamp with a good luck symbol if you have one. If not, just do it like me, take a red packet with good luck symbol, cut it out and place it on the nian gao when it is still warm.
