NEW YORK PUSHCART ONIONS (FOR HOT DOGS) RECIPE | ALLRECIPES

New York Pushcart Onions (For Hot Dogs) Recipe | Allrecipes image

I am a Canadian who spent 6 winters in Florida, and while there I met a person from New York (Brian). I did the cooking for most parties at the park, including snacks for our golf group which met twice a week after golf. Brian told me about the Push Cart Onions and I tried them with the group. They loved them. You can play with this recipe to suit your taste. Add more or less sugar, maybe a little more hot sauce, etc.

  • "Coat the bottom of a saute pan with cooking oil (like canola) and preheat over high heat until it begins to shimmer, about one minute. Add the thickly sliced onions, separating them into individual segments as you drop them into the pan, and sprinkle with a hefty pinch of kosher salt. Cook the onions until they’re soft and golden (about 10 minutes), stirring occasionally and scraping the bottom of the pan with a wooden spoon. (If any bits of onion get stuck to the bottom and start to burn, add a splash of water to the pan and scrape it up.) In a measuring cup, stir together the water, ketchup, mustard, garlic powder, smoked paprika, and cinnamon. When the onions are ready, pour the mixture in the saute pan and stir well. Cover the pan, turn the heat to low, and cook for 25 minutes, stirring occasionally. Turn off the heat, remove the lid from the pan, and let the onions cool for a few minutes. Give them a taste, then add salt and pepper as desired."
