Combine cooked new potatoes with chopped celery, shallots and parsley and dress with a mixture of mayonnaise and mustard for a creamy, tangy potato side dish salad.

3 pounds new potatoes, scrubbed clean
Salt and pepper
1 cup reduced-fat mayonnaise
2 tablespoons Dijon mustard
2 tablespoons red wine vinegar
2 celery ribs, thinly sliced
1 shallot, minced
2 tablespoons chopped fresh parsley

Steps:

  • Place potatoes in a large pot and pour in enough cold water to cover by 1 inch. Add 1 Tbsp. salt and bring to a boil over high heat. Reduce heat to medium-low and cook until potatoes are tender, 13 to 17 minutes. Drain, return potatoes to pot and cover with a damp kitchen towel. Let stand, off heat, until soft, 10 to 15 minutes.
  • In a small bowl, combine mayonnaise, mustard and vinegar. Cut potatoes into halves or quarters. In a large bowl, mix potatoes with celery, shallot and parsley. Fold in mayonnaise mixture and season well with salt and pepper. Serve at room temperature.

Number Of Ingredients 5

2 tablespoons extra-virgin olive oil
2 teaspoons minced fresh rosemary leaves
½ teaspoon kosher salt
½ teaspoon freshly ground black pepper
2 pounds/910 grams new potatoes, each 1½ to 2 inches in diameter, scrubbed and cut in half

Steps:

  • Prepare the grill for grilling your roasted new potatoes with direct cooking over medium heat ( 350° to 450°F).
  • In a medium bowl combine the oil, rosemary, salt, and pepper. Add the potatoes and stir to coat them evenly. Brush the cooking grates clean. Grill the potatoes over direct medium heat, with the lid closed, until tender and browned on all sides, 15 to 20 minutes, scooping and turning with a wide spatula every 5 minutes or so. Remove your perfectly grilled roasted new potatoes from the grill and transfer them to a serving bowl. Serve warm.
